Spanish Cod with Flavorful Vegetables | Bacalao a la Baenense

This Spanish Cod with Flavorful Vegetables is one of Spain´s best-kept secrets. It´s an unknown recipe from the small town of Baena in the province of Córdoba. Where it´s known as Bacalao a la Baenense.

This dish is basically vegetables cooked in extra virgin olive oil and then topped off with a couple of cod fillets. And let me tell you, the end result is melt-in-your-mouth cod with the most incredibly flavored veggies.

To make this dish I used cod fillets I bought frozen and thawed out. Just to make things easier and cheaper. Of course you can use fresh cod or any other type of firm white fish. Such as halibut, sea bass or even haddock.

TIPS & TRICKS to Make this Recipe: Once you add the water into the pan, make sure to add enough to cover all the vegetables & potatoes, that way the potatoes cook through. You want the potatoes to be cooked al dente, otherwise they will fall apart. About 20 to 25 minutes on a medium heat usually does the trick.

Spanish Cod with Flavorful Vegetables | Bacalao a la Baenense

Ingredients

  • 2 tbsp extra virgin olive oil 35 ml
  • 1 onion
  • 4 cloves garlic
  • 1 red bell pepper
  • 1 large potato
  • 2 tomatoes
  • 1 tsp sweet smoked Spanish paprika 2.30 grams
  • 2 cod fillets 7 oz / 200 grams each
  • handful fresh parsley
  • pinch sea salt
  • dash black pepper

Instructions

  1. Roughly chop the onion, roughly chop the garlic, finely chop the red bell pepper and cut the potato (peeled, washed & patted dry) into 1/4 inch (.635 cm) thick rounds

  2. Heat a large fry pan with a medium heat and add in a generous 2 tbsp extra virgin olive oil

  3. After 1 minute add in the onion, garlic and red bell pepper, mix with the olive oil, after 4 minutes and the veggies are lightly browned, add in 1 tsp sweet smoked Spanish paprika, quickly mix together, then add in the 2 tomatoes finely grated, mix together and simmer

  4. Once the tomatoes have slightly thickened up, about 3 minutes, add in the slices of potato and season everything with sea salt & black pepper, gently mix together, then add in about 2 1/2 cups (600 ml) cold water or more, enough to fully cover the ingredients, give it a final mix, making sure the potatoes are all in a flat layer and fully coated in the water

  5. About 20 to 25 minutes after adding the water and the potatoes are cooked al dente, add in the cod fillets, seasoned with sea salt & black pepper, both in a single layer, place a lid on the pan and lower to a low heat, simmer for 4 to 5 minutes or until the cod is fully cooked through, then remove the pan from the heat

  6. Transfer the vegetables into serving dishes, top off with the cod fillets and a generous portion of finely chopped parsley, enjoy!

    made this for the first time last night and was amazing. great and easy to make. I used veggie stock instead of water and added a bit of tomato paste since I made some with my garden tomatoes. I may try to use this recipe to get onto Master Chef!!!! lol

    I used the same amount of water that you listed, but at the end of the 20-25 minutes there was so much water left, and yet the potatoes were still done. What did I do wrong?

      Every pan and stove top heats differently, as well as the type of potatoes that are used. I used potatoes that are a bit more waxy than starchy, such as yukon gold. Next time just try adding in a bit less water and see how that goes 🙂 much love

    That chick pea and spinach almonds and raisins recipe was delicious. Never thought of adding raisins and almonds before. Really balanced taste. Loved it. Didn’t use stock as had some sinfully old white wine I found in a bottle by the shoe cleaning stuff!! Worked a treat well cooked!
