A quiche is a baked egg-based dish in a pie pan that can be filled with toppings such as cheese, meat, vegetables, and spices. Quiches were invented in 16th-century France, although German variants also exist. In France, quiches are appetizers, while in the United States, they are eaten as a main course, often for breakfast.

How to Make the Favorite Breakfast Ham Spinach Quiche

This is my favorite make ahead breakfast. I can freeze it in a tart pan or pie plate and pop it in the oven whenever I need it.

These are the basic steps for making ham and cheese spinach quiche. Refer to the full, printable recipe card below for detailed instructions.

Unbaked pie crust in a dish, ready for a ham and cheese and spinach quiche filling.

1. Prepare the Quiche Crust

Preheat the oven to 350 degrees. Then, use a fork to make small pricks all over the pie crust. Blind bake the crust for 8 minutes. Meanwhile, in a large skillet, heat the butter or oil over medium heat.

2. Make the Filling

Once butter is hot, add the spinach and saute until completely wilted, stirring occasionally, then remove from heat. In a large bowl, whisk together the eggs, milk, and heavy cream, and beat in the seasoning. Stir the cooked spinach and mix with the cheese and ham in the large mixing bowl to make the spinach mixture.

3. Pour the Mixture and Bake the Quiche

Pour the ham mixture into your pre-baked pie shell and place it on a cookie sheet to prevent oven spills. Finally, place quiche in the oven and continue baking for 25-35 minutes, until the eggs are completely cooked through, and a fork inserted into the center comes out clean. Let cool slightly before serving. Serve with breakfast potatoes or fruit salad.

Ham and Cheese Breakfast Quiche FAQs

While both of these breakfast dishes contain eggs and other ingredients, quiches are baked in a pie dish, while frittatas are cooked over the stove and folded over like an omelet. Quiches also include a crust, while frittatas do not.

To make sure your quiche is light and fluffy, use a half cup of whole milk for every egg in the quiche. You can also use heavy cream or half and half instead of milk.

Wrap the quiche and place in fridge for up to 3-4 days.
