On Sundays after church, when we have the time to cook a nice breakfast, we make something that we wouldn’t during the week.

For a while, I was making some sort of fried egg meal. And for a while after that, I was making variations of avocado toast. And then I started putting a fried egg on avocado toast.

It’s so good if you haven’t tried it.

We’re past that now and I’ve moved on to breakfast quesadillas. I make them every Sunday and vary what’s in them. So far, they’ve all been delicious.

How To Make Sausage And Egg Breakfast Quesadillas:

Cut the casing off the beef sausage. Break it apart into small pieces and heat those in a pan over medium heat until they start to get a little crisp around the edges.

Remove it from the heat and set aside.

Spray a pan with avocado oil cooking spray (you can use traditional cooking oil, but we found better results using avocado oil).

Place one of the flour tortillas in the pan.

Put 1/4 of the shredded cheddar cheese on top of the tortilla.

If you shred the cheese yourself, it’ll melt better than if you purchase bagged shredded cheese from the store. It takes a minute to shred it yourself, which you can do while the sausage is cooking, and it’s so worth it.

Add half the cooked sausage.

Make three wells and crack an egg into each well.

Place a flour tortilla on top.

Put the lid on and cook about eight minutes until the eggs are nearly cooked through and the bottom tortilla is crisp.

Remove the lid, spray the top tortilla with the avocado oil spray, and flip the entire quesadilla.

Put 1/4 of the shredded cheese, half the Roma tomato, and half the green onion on the top of the crispy tortilla.

Put the lid on and cook another five minutes until the eggs are cooked through and the cheese on the top of the breakfast quesadilla is melted.

Remove from the heat and cut into four to six pieces (depending on how you want to serve it).

Continue with the rest of the ingredients to make a second sausage and egg breakfast quesadilla.

Can you scramble the eggs instead?

The eggs in this recipe cook like a fried egg. If you don’t like a fried egg, you can scramble the eggs instead.

After the sausage is cooked, beat an egg with a tablespoon of milk and some salt, and cook it in a pan. Add the scrambled egg to the quesadilla.

In this case, you might need to flip your quesadilla a little sooner because you only need to wait until the tortilla is crisp. You don’t have to worry about making sure the egg is cooked through, since it already will be.

How can you store leftover quesadillas?

If you have any leftover quesadilla pieces, wrap them in foil and put them in an airtight container in the fridge. It’ll last three to four days that way.

How can you reheat leftover quesadillas?

The easiest way to reheat leftover quesadillas is to unwrap them from the foil, place the foil on a cookie sheet in the oven, and heat them for about 15 minutes at 350 F. That’s an easy way to heat up multiple pieces at once.

If you try to microwave leftover quesadillas, the tortilla will get really soggy and won’t taste as great as it would out of the oven.

Could you use pork sausage instead of beef sausage?

The simple answer is yes, you could use pork sausage instead of beef sausage in this, but you would end up with a different flavored recipe.

Pork sausage is pretty mild and when you’re eating it, you taste more of the spices added to it than the pork itself. Beef has a stronger, distinct flavor. So when you cook with beef sausage, you can taste that beef flavor in your recipe.

Of course, it’s a matter of preference.

If you prefer pork sausage, go ahead and use it. Just keep in mind that the recipe won’t exactly be the same.

Southside Market and Barbecue was established in Texas in 1882. That’s why the full name of the product we used in this post is the 1882 Hot Beef Smoked Sausage.

It’s an all beef sausage wrapped in a pork casing. Yes, beef is the main sausage component, not pork. Texas barbecue is actually known for leaning towards beef products (like beef sausage and brisket, although it does do pork really well too; honestly, Texas barbecue can do no wrong in my book).

The pork casing doesn’t matter to us, particularly, in this recipe because we do end up cutting it off and tossing it away so that we can use the sausage in a crumbled manner.

This sausage comes fully cooked, which makes the breakfast quesadilla recipe go a little quicker. When you’re heating the sausage on the stove, you’re really doing it for temperature and texture. You’re not doing it for safety reasons.

The Southside Market Hot Beef Smoked Sausage is spicier than some of the other sausage products the brand sells, and that works really well in this recipe. That flavor really comes out in each bite.

  • Avocado oil cooking spray
  • 4 flour tortillas
  • 4 oz. cheddar cheese, shredded
  • 6 eggs
  • 1 Roma tomato, sliced
  • 4 green onion sprigs
