Make Ahead Breakfast Casserole Cups

Back-to-school season is one of the busiest times of year in my home. Between school, after-school activities, and our normal family life, our time gets sucked up quickly. As a result, we end up making a lot of decisions based on what’s quickest, or most convenient. These Make Ahead Breakfast Casserole Cups are the perfect grab-and-go meal for busy school mornings.

Mornings are chaotic day during the school year at our house because all of my kids leave for school at different times. It’s impossible for us to eat breakfast as a family since my teen daughter leaves for school just as my youngest daughter is waking up. And, because my teenagers like to sleep as late as possible, they don’t leave much time for breakfast. That means I have to have grab-and-go options for them and these Make Ahead Breakfast Casserole Cups are perfect.

Cereal used to be my go-to for breakfast convenience. Unfortunately, those carbs get burned up by my kids’ young metabolisms well before lunch arrives. So, I had to find a way to pack some protein into their morning meal to help stave off hunger longer. I came up with these Make Ahead Breakfast Casserole Cups that are mini-versions of my family’s favorite weekend breakfast casserole. I can make them on the weekend and freeze them so the kids can reheat them for breakfast during the week.

Time is a hot commodity in my house so most of my recipes are designed to be quick and easy to put together. These Make Ahead Breakfast Casserole Cups are no exception. To save time, I use Jimmy Dean fully cooked turkey sausage crumbles so that I can add them right to the egg mixture without having to cook them first. This saves me time and another dish I’d have to clean.

These breakfast casserole cups are packed with tons of protein to keep the kids satisfied until lunch time.

Make Ahead Breakfast Casserole Cups

Ingredients
  

  • 9 eggs
  • 1/4 cup milk
  • 1/4 cup diced onions
  • 1/2 cup Jimmy Dean fully cooked sausage crumbles
  • 1/2 cup diced red bell pepper
  • 1/2 cup chopped fresh spinach
  • 1/2 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper

Instructions
 

  • Preheat oven to 350°F. Line muffin tin with silicone liners or spray with non-stick cooking spray.
  • Combine all ingredients in a large bowl and whisk until well mixed.
  • Divide mixture evenly between muffin cups.
  • Bake for 20 minutes or until the eggs are firm and the tops spring back when touched.
  • Serve immediately or let cool completely and freeze. To serve, microwave for 30-45 seconds.

One important note, when you take them out of the oven, they’ll look ENORMOUS! Let them sit for 2 minutes and they’ll deflate and look normal.

On busy school mornings, the kids just need to take out however many they want to eat and microwave them for 30-45 seconds (longer if warming more than 2 at a time). Since all the healthy ingredients are packed into one handheld cup, they’re easy to take on the go!

My kids’ favorite breakfast is a whole wheat waffle and Jimmy Dean fully cooked turkey sausage. They warm the turkey sausage in the microwave while the waffle cooks in the toaster. Then, they add a piece of fruit or a glass of juice to satisfy my “balanced” meal rule. Breakfast is ready in under 5 minutes, they love it, and I’m happy that they’ve started the day with plenty of essential nutrients.

On cooler days, oatmeal is a favorite in my house. We add berries or bananas instead of sugar to sweeten it (and pack in vitamins and antioxidants). Served with a glass of milk, this is another quick and easy breakfast that gives them a satisfying and nutritious start to their day.

If your kids are like mine and they start complaining two weeks into school about having the same thing AGAIN, try these non-sandwich ideas:

Fuel for School

You probably noticed that I incorporate Tyson products into a lot of our breakfast and lunch ideas. These products are staples in my home because even though they are convenient and save me time. In addition to Jimmy Dean sausages and Hillshire Farm lunch meat, I usually stock Tyson chicken nuggets (minimally processed and made with 100% all-natural ingredients) and Hillshire Farm turkey smoked sausage (sauteed with potatoes and onions, this is a quick and easy weeknight dinner).
