Lemon Pasta ( Pasta al Limone)

The Lemon Pasta ( Pasta al Limone) is a classic Italian pasta recipe. It only uses a few ingredients and the results are incredible. It’s a simple dish, but you can definitely impress your guests with it. It’s also perfect for a magical dinner night or even just having lunch by yourself.

This is a popular recipe from southern regions of Italy. The original traditional recipe is not vegan, as it uses cream, ricotta or goat cheese. But for sure you’ll love my vegan version of this pasta.

It is important to note that you will use the zest of one lemon. The zest is only the bright colored yellow part of the lemon, not also the white part. The white part is bitter and will change the taste of the sauce in a bad way. As you will be using the outer layer of the lemon, you need to keep in mind that they often spray the lemons with pesticides or coat them with a fungicide wax. To avoid all of this I recommend you to buy untreated/ organic lemons.

To replace the ricotta, cream or goat cheese, I use vegan cooking cream. You can find plenty of them in shops, based on soy, oat, almonds, etc. Any of them works, but it’s best if it’s a bit runny. Find a brand that you like and stick with it.

This Lemon Pasta recipe works best with longer shaped pasta, like spaghetti or linguine.

The herb that fits perfectly to this recipe is thyme. Add a bit of fresh thyme to enhance the pasta taste. If you can’t find it fresh, you can use dry thyme as well.

Ingredients

200 g pasta ( 2 portions)

1 small lemon ( juice and zest)

1 vegan cooking cream ( 250 ml)

1 onion

4 cloves garlic

2 tablespoons olive oil

salt and pepper

thyme

Instructions

Step 1: cook the pasta according to the package instructions

Step 2: chop the onion and garlic. Juice and zest the lemon ( only the thin outer zest, bright colored not the white part)

Step 3: heat the oil in a pan and cook the onion and garlic for 2-3 minutes

Step 4: add the lemon juice and zest and the cooking cream. Cook for another 3-4 minutes

Step 5: when the sauce is ready, add the pasta

Step 6: add salt, pepper and thyme to taste

Step 7: enjoy
