No Bake “Flower Pot” Cake

Life is too short to eat boring food. If you want a spectacular dessert, this No Bake “Flower Pot” Cake recipe is perfect for you. It’s not hard at all to make it and the result is incredible. Everybody will think it’s a plant, but they will be really impressed finding out it’s actually a cake.

The recipe has 3 parts: bottom layer, top layer and the plant

This recipe has three parts: the bottom layer, which is the cream, the top layer, which is supposed to look like potting soil and the plant, which is a herb.

I choose to make a vegan reverse cheesecake with mascarpone and almond crumble. But you can only take the idea and make any recipe. For the bottom layer it can be anything, from chocolate ganache to puddings. And for the top layer, you can also use crushed Oreos. Everything will be ready quickly.

However you should consider to soak the cashews in water at least 6 hours before to use them. The longer they stay in water, the better. If you are craving this and you want to eat this now, you can speed the process a bit by soaking them in hot water for 30-45 minutes or boiling them for 15 minutes. If you have the time, I’ll recommend you to choose the first option.

For the pot, I used some small ceramic bowls. Small mugs or sauces bowls also works. Be careful if you want to use real pots to make it look real, cause not all are food safe.

The plant can be any herb, cause it’s for only for decoration. It can be mint, oregano, rosemary, basil, thyme. Just take a branch and plant it in the cake. Don’t try to use any branch that you have in your house, cause many plants are toxic or might be treated with pesticides.

Transform any breakfast into a “Flower Pot”

Moreover you can easily transform any breakfast recipe into a “Flower Pot”. Cover your smoothie or oatmeal with crushed almonds or Oreos and your plant is ready to serve. Kids will adore this.

Ingredients

Bottom layer:

1 cup soaked cashews

1 can coconut milk ( only the solid part)

1/3 cup maple syrup ( add more for a sweeter taste)

1 teaspoon vanilla extract

1 cup frozen/ fresh mix of berries

 

Top layer:

1 cup almonds

1 tablespoon cocoa powder

2 tablespoons vegan milk

2 tablespoons maple syrup

 

The plant:

any fresh herb ( basil, oregano, rosemary, mint)

Instructions

Step 1: make sure you soaked the cashews at least 6 hours in water ( or 30-45 minutes in warm water)

Step 2: start with the mascarpone cream layer. Blend everything in a food processor. I choose not the blend the berries and to let them whole and mix them after with a spoon. Both ways are great

Step 3: fill the ceramic bowls or the mugs you are using with the cream

Step 4: blend everything for the top layer and add it over the mascarpone

Step 5: refrigerate for at least 30 minutes

Step 6: when you are ready to serve it, take a branch of a herb and plant it in the cake

Step 7: enjoy
