All you need is love and crepes. Treat yourself or your loved ones with this just 3 ingredient crepes recipe.

This is a simple recipe, I do it really often just with this 3 ingredients, but of course you can add more flavor to the recipe. This goes well with any filling and topping from sweet to savory, as the crepes have a neutral taste. Sometimes I like to do them half sweet with vegan chocolate cream and half savory with spinach and almond cheese inside. That’s why I don’t add sugar or any flavors to the crepes.

Definitely you can enhance the recipe with vanilla, cinnamon, lemon zest, add some sugar and customize it on your own taste,

The pan is also important. Use a non stick one, otherwise spray some oil on it. Also make smaller crepes, rather than big ones, to avoid breaking them when flipping. There are also pans just for crepes and they are not that expensive. I have two of those and I always use them both in the same time to save some time.

The sparkling water is magic for this recipe. It’s best to use a new unopened sparkling water bottle to get the best results.

Ingredients

one cup flour ( I used all purpose flour)

2 cups sparkling water 

1 tablespoon neutral oil ( I used sunflower oil)

Instructions

Step 1: mix everything in a bowl just enough to incorporate the wet into the dry ingredients. Don't overmix the batter. If there are lumps, let it sit for 5-10 minutes.

Step 2: in a heated non-stick crepe pan, add approximately 1/4 cup of batter in the middle and tilt the pan in a circular motion. Don't go right till the edge to be easier to flip. Cook for 1 minute each side.

Step 3: add your favorite fillings and toppings

Step 4: enjoy
