Thailand is a food lover's paradise and undoubtedly one of the world’s top destinations for street food if you want to give your tastebuds a real treat. When it comes to Thai food, Pad Thai has to be the most popular dish that everyone thinks of in the first place. This stir fry noodle is an iconic street food of Thailand, one that has made its way into kitchens and restaurants across the world and has become the national dish of Thailand.

However, this recipe is pretty simple to pull together in your kitchen in under 30 minutes. So let's get to it!
What is Pad Thai?

Pad Thai is a stir-fried noodle that is made with tender rice noodles, chicken or shrimp, bean sprouts, and a medley of colorful veggies and finished off with crunchy peanuts, fresh coriander, and a squeeze of fresh lime juice.

This Pad Thai combines sweet, savory, and tangy flavors to make an insanely delicious dinner that tastes like the one from your favorite takeout restaurant.

The Pad Thai sauce gives the dish its unique taste and can be made from scratch by combining a few simple ingredients. It is made with a combination of tamarind, fish sauce, soy sauce, and sweetened with brown sugar to give it a perfect balance.

Notes
  • You can also easily customize this recipe by swapping out whatever vegetables you have on hand. Make sure they’re cut into thin strips so they cook quickly.
  • Don’t like chicken? Feel free to leave it out for a meatless version or make it with your favorite protein like shrimp or even tofu.
  • If you make it with shrimp, heat the oil in a large non-stick skillet over medium-high. Add the shrimp and saute until the shrimp begins to turn pink for about 2 minutes. Don't cook them for too long, or they will become chewy and dry.
  • To prevent mushy, overcooked noodles, under-cook rice noodles slightly when cooking them.
  • Stir-frying is a super-fast cooking method, so it is important to have all your ingredients prepped and have them near your stovetop before you begin cooking.

Ingredients:
  • 230 gm flat rice noodles
  • 2 tablespoons oil
  • 3 cloves garlic, finely minced
  • 200gm chicken breasts
  • 2 eggs beaten
  • 1 cup bean sprouts
  • 1 red bell pepper, thinly sliced
  • 1 Tablespoons fish sauce
  • 3 Tablespoon light soy sauce
  • 3 Tablespoons brown sugar
  • 3 Tablespoon rice vinegar
  • 1/2 cup crushed peanuts
  • Fresh cilantro, for serving
  • Limes, cut into wedges, for serving

Instructions:
  1. Cook noodles according to package instructions (or place rice noodles and cover with boiling water for 4-5 minutes, until al dente. Drain the water, rinse them in cold water and set them aside.
  2. In a small bowl, whisk together the fish sauce, soy sauce, the rice vinegar and the brown sugar. Set aside.
  3. Slice chicken pieces into very thin strips and season with salt and pepper.
  4. Heat 1 tablespoon vegetable oil in a deep large nonstick skillet over medium high heat. Once hot, add the chicken strips and let them cook for 3-4 minutes or until cooked. Transfer them to a plate.
  5. Heat another tablespoon oil in the same skillet and heat over medium high heat. Add the minced garlic and sauté for a minute. Add the sliced bell peppers and cook for a minute. Reduce heat to medium and pour beaten eggs over vegetables and cook, stirring constantly, just until scrambled.
  6. Add the prepared sauce and noodles and increase heat to medium-high. Toss until everything is well combined.
  7. Stir in the cooked chicken, bean sprouts, and the crushed peanuts.
  8. Garnish with cilantro and lime wedges and serve hot.
