What is Osso Buco

Osso bucco or ‘ bone with a hole’ is Italian specialty from the Lombard cuisine. The veal shanks are cooked slowly with vegetables and white wine until tender and falling off the bone. It is served with gremolata over a bed of creamy polenta, risotto or pasta.

I didn’t have any parsley so didn’t make gremolata but I’d recommend it – it adds so much freshness and flavour to the succulent veal pieces.

What you need:

  • veal shanks
  • onion
  • white wine
  • beef stock
  • flour
  • butter
  • tomato paste
  • salt and pepper
  • polenta

Here’s how to make this beautiful Succulent Osso Buco with Creamy Polenta

Ingredients:

  • 3-4 veal shanks, depending on their size
  • 4tbsp flour
  • 2 carrots, roughly cut
  • 1 onion, chopped
  • 400ml dry white wine
  • 800ml beef stock
  • salt and pepper to taste
  • 400g precooked polenta
  • a handful of fresh sage leaves
  • 2tbsp olive oil

Preparation:

  • Heat a deep dish with olive oil. Season the veal shanks well with salt and pepper on both sides and then dust them with a bit of flour on both sides. Cook until golden on both sides and remove from the dish. Add the onion and cook for a couple of minutes. Stir in the carrots and leave for 4-5 minutes.
  • Place the veal shanks back in the dish. Add the wine, beef stock and sage.
  • Cover with lid and cook in the oven for about 2 hours until the meat is falling apart.
  • I used a precooked polenta which I had to heat, add butter to and season. If you wish, you can prepare your own.
  • To serve – add a generous serving of the creamy polenta and arrange the veal shank on top.
  • Also can be served with risotto, pasta and mash potatoes.
