Easy Blueberry Cobbler With Bisquick

Oh my gosh. This is seriously one the best fruit cobblers I’ve tried yet! The fresh blueberries turned into a perfectly sweetened jam, and there was a lovely zip of citrus from the lemon zest.

The topping was cake-like, and it was moist, delicious, slightly sweet, and had a beautiful cinnamon flavor.

This is a cobbler you’ll be impressed you made, and even more excited to serve to friends and family. Nobody will realize how little effort it took.

I love serving it with a scoop of vanilla ice cream, but it would also taste amazing with a dollop of whipped cream.

I’m really torn about whether this blueberry cobbler or this Bisquick Peach Cobbler is my favorite. They’re both so incredibly delicious.

Ingredients

Butter: A melted layer of butter at the bottom of the baking dish adds a level of richness to the blueberries that’s truly delicious. It all melts together to create the most incredible jammy flavor.

Blueberries: I love using fresh blueberries during the summer. It’s the best way to use up all of that fresh summer fruit!

Sugar: White granulated sugar keeps the cobbler light and fluffy. If you want a more moist and dense cobbler topping, you could substitute that portion of the sugar with light brown sugar. It would also add a lovely caramelized flavor.

Lemon Zest: You can use lemon zest or lemon juice, but I prefer the flavor of fresh lemon zest in this recipe.

Bisquick: Using a ready-made baking mix makes this comfort food dessert even easier to pull together. You don’t have to worry about baking soda or baking powder, and I love that the leaveners are already perfectly portioned with the flour.

Milk: Using milk instead of water adds more flavor, and creates a more tender cobbler with a finer crumb.

Cinnamon: Sprinkling a bit of ground cinnamon on top adds a lovely layer of flavor. You could skip this, or sprinkle a layer of coarse sugar over top instead.

How To Make Bisquick Blueberry Cobbler

Start by rinsing the blueberries in a colander, then toss the damp blueberries with sugar and lemon zest in a bowl. (See the recipe card below for the full printable instructions.)

Mix together Bisquick, sugar, and milk to make the cobbler batter.

Melt butter in the baking dish, then pour the blueberry mixture over the melted butter. This can also be baked in a cast iron skillet or Dutch oven.

Fresh Blueberries, Frozen Blueberries, Or Canned Blueberry Pie Filling?

I prefer using fresh blueberries when I have an abundance of them in the summer. You could also use thawed frozen blueberries. The rest of the instructions would remain the same.

If you’d rather use blueberry pie filling, simply omit the step of coating the blueberries in sugar and lemon zest, and then proceed with the rest of the instructions as they’re written.

You could even swap the blueberries for blackberries or cherries if that’s what you happen to have on hand! Any of those would turn out perfectly with this Bisquick topped blueberry cobbler recipe.

Ingredients

  • 6 Tablespoons butter (85 g)
  • 3 cups fresh blueberries
  • 3/4 cup granulated sugar (divided)
  • 1 teaspoon lemon zest (or 1 1/2 Tablespoons lemon juice)
  • 1 1/2 cups Original Bisquick Mix
  • 3/4 cup whole milk
  • 1/2 - 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat the oven to 350 F (176 C). Place the butter into an 8x8 baking dish. Set the dish in the oven to allow the butter to melt while preparing the rest of the cobbler ingredients.
  2. Rinse the blueberries in a colander and give the colander a shake to get rid of the excess water, but leave them a bit damp so that the sugar stick will stick to the berries. Transfer the blueberries to a medium mixing bowl. Add 1/2 cup sugar and the lemon zest, and stir.
  3. To a medium mixing bowl, add the Bisquick, the remaining 1/4 cup of sugar, and the milk. Stir to mix.
  4. Carefully remove the baking dish from the oven. Pour the prepared blueberries over the melted butter, then pour the batter on top of the blueberries. Sprinkle the cinnamon over the batter.
  5. Bake uncovered in the preheated oven for 38-40 minutes (or until bubbly and golden brown).
  6. Let rest for 5 minutes. Serve warm with vanilla ice cream.
