For many of us, our mothers and grandmothers have influenced our love for cooking. But as a kid, I did not have a flair for cooking nor did I have any such plan for the future. I got married to a foodie, and he introduced me to a whole new world of culinary delights. Initially, what seemed like a daily chore has slowly turned into my passion. The world of food and cooking seems like a work of art, there's always something new to learn, nuances to pick up, and inspirations to be added to the repertoire.

The recipe for the Granola Fruit Tart has been sitting in the back of my mind waiting for its moment to shine, and what better time to share it than now with Valentine's Day a few days away. Who wouldn't like to kick Valentine's day off with a beautiful, delicious, romantic breakfast? This is sure to win over the heart of your special one.

These Granola Fruit Tarts feature a simple granola crust filled with an unsweetened yogurt filling topped with fresh strawberries, blueberries, and raspberries for a gorgeous breakfast or a delightful dessert!

These are healthy, gluten-free, taste absolutely divine, and can be made within 30 minutes.

Instead of the classic buttery tart crust, I have made a healthier version. The basic ingredients used to make this nutrient-rich granola crust are oats, walnuts, olive oil, and honey. If you want to make a chocolate version, you can add some cocoa powder to the mix. Your kids will surely love them!

Notes
  • The granola tarts can be made the night before and then simply topped with yoghurt and berries right before serving. You can get super creative with the toppings and use what you have in your refrigerator and pantry.
  • To make them vegan, you can use maple syrup and any non-diary yoghurt of your choice.
  • If you're not having them right away, you can store the tart shells in an air tight container for 1-2 days. The tart shells are quite fragile, so it's best to keep them in the tart pans to help them stay intact.
  • Instead of making several mini tarts, you can also bake one big tart and then decorate it with fruits before serving it to friends and family.

Ingredients:
    For the Tarts
  • 1 ½ cups old fashioned oats
  • 1 cup walnuts, finely chopped
  • ¼ cup honey
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon powder
  • 3 tablespoons olive oil

  • For the toppings:
  • 2 cups Greek yogurt
  • 2 1/2 cups of mixed fruit (strawberries, raspberries, blueberries)

Instructions:
  1. Preheat the oven to 175 degrees Celsius. Grease your mini tart pans with oil.
  2. Add the oats, walnuts, salt, cinnamon, and vanilla extract to a blender. Pulse 3-4 times until the oats have a coarse flour texture.
  3. Then, slowly add the olive oil and honey together with the oats. Pulse 2-3 times until it has a dough-like texture.
  4. Press about 3 tablespoons of the mixture into the greased mini tart pans. Using your hands or the back of an oiled spoon press down the crust mixture forming the shape of your tart. Make sure to leave room for the filling.
  5. Place the mini tart pans on a baking pan. Bake tarts in the oven for 15-17 minutes or until golden.
  6. Allow them to cool completely in the pan before removing.
  7. Carefully take the tarts out of the tart pans and fill them with yogurt. Top with strawberries, blueberries, and raspberries.
  8. Serve immediately and enjoy! Do not assemble the tarts in advance as the granola crust will get soggy if left to sit for too long.
