Few days ago, I came across an article that stated how snacking behavior has been reshaped by the current pandemic. It mentioned how with the full force of Covid 19, most people have found themselves snacking more often than they were before the outbreak. Truly, most of the time when we are stuck indoors feeling bored, the calls of the fridge are hard to ignore and we tend to snack on unhealthy foods. It can be quite a challenge to find quick yet nutritious snack options.

When it comes to healthy snacking, energy balls or energy bites are a great option. However, the ones that are available in the market often contain high level of sugar and are not so healthy. This is one of the reasons I like making them at home as I am in absolute control of what goes in them.

What are Energy Balls?

Energy Balls, energy bites, or whatever you may call them, are delicious bite-sized snacks that are rolled into little balls. They are usually made with oats, peanut butter and a combination of different nuts and seeds, plus any add-ins of your choice.


These No Bake Chocolate Peanut Energy Balls are made with wholesome ingredients and packed with fiber and protein which will keep you feeling satiated for a long time. Rolled oats, dates, and peanuts make up the base of these energy balls, but you can use any nuts or seeds of your choice.

No-Bake Chocolate Peanut Energy Balls
How do you store these Balls?

You can store these in an airtight container for 3 days at room temperature or up to a week in the refrigerator.

Ingredients:
  • 1/2 cup rolled oats
  • 1/2 cup chopped peanuts
  • 1 cup pitted dates
  • 2 tbsp cocoa powder
  • 3 tsp vanilla extract
  • 2 tbsp honey
  • 1 tsp olive oil
  • 1/3 cup dessicated coconut

Instructions:
  1. Add all the ingredients to a food processor and pulse on high until well combined.
  2. When you grab some of the mixture with your hand and press firmly, you should be able to form a ball. If you cannot do so, add a little more oil and pulse again until the mixture holds together.
  3. Scoop pieces of the mixture and roll it into small balls between your palms.
  4. Store the energy balls in an airtight container in the refrigerator.
