This moist Bisquick Coffee Cake is quick and easy to make! It’s topped with a cinnamon streusel topping that adds a delicious sweet crunch.

This coffee cake is so moist and so delicious.

The brown sugar and butter streusel melts through the cake while it bakes.

The apples are soft but still have a bit of a crunch. The flavor is incredible, and I also love that it made my house smell like an apple cinnamon candle. 

I recently baked an apple cake as a birthday cake, and it was so popular that I decided to try making this as an apple coffee cake.

It was so good and I loved the addition of the fresh apples! Feel free to leave the apples out if you don’t want them though. All the other ingredients and instructions would remain the same.

Contrary to what you might think, coffee cake doesn’t actually have any coffee in it. It’s named coffee cake because it’s the perfect pairing with a cup of coffee. That’s why it can easily be enjoyed as a dessert or as a breakfast.

What Is The Difference Between Cake And Coffee Cake?

Coffee cake isn’t similar to a birthday cake. The cake it would be the most similar to is a crumb cake or a pound cake (be sure to check out this amazing Whipping Cream Pound Cake). The thing that really sets coffee cake apart is the delicious brown sugar and cinnamon streusel topping.

Ingredients

Bisquick: Using Bisquick as the base of our coffee cake makes things so much easier. You don’t have to worry about cake flour or testing whether or not your leaveners (baking soda and baking powder) are fresh enough to get the proper rise.

Sugar: White sugar in the coffee cake helps sweeten it while keeping it fluffy. Light brown sugar in the streusel topping caramelizes perfectly and creates the classic streusel flavor.

Butter: Butter is mixed with brown sugar to create the perfect streusel topping. It caramelizes with the sugar and melts into the cake in the most delicious way. I wouldn’t recommend swapping it for any other fats (like oil).

Milk: Milk is mixed with Bisquick to make the base of the cake. Since it has a higher fat content than water, it adds more flavor, makes a softer cake, and creates a finer crumb. Using water would make a much more dense cake.

Egg: An egg acts as both a binder and a leaver in this recipe. It’s definitely needed, so I wouldn’t recommend omitting it.

Fruit: You can absolutely make this recipe without fruit if you’d like. I love the addition of fresh apple, so I included it here. You could also use a bit of diced up apple pie filling if you’d prefer, but I definitely prefer the flavor and texture of fresh apples when given the choice.

Flavors: Ground cinnamon and pure vanilla extract add a subtle layer of flavor that really complements the apples and streusel topping.

How To Make Bisquick Coffee Cake

Start by mixing together the brown sugar, some of the cinnamon, and some of the Bisquick. Then add the cubed butter to the bowl and cut it into the sugar mixture using a pastry cutter or a fork. It should look crumbly. (See the recipe card below for the full printable instructions.)

Peel, core, and dice the apple. Then toss the apples in a bit of Bisquick. This helps stop them from sinking to the bottom during the baking process.

Mix together the remaining Bisquick, remaining cinnamon, milk, sugar, egg, and vanilla.

Transfer the batter to a greased baking dish. Evenly sprinkle the streusel topping over the batter.

How Do You Keep A Coffee Cake Moist?

To store your coffee cake and keep it fresh, cover it tightly with plastic wrap or aluminum foil and store it at room temperature. It should last for 1 to 2 days this way.

Optional Adaptations

One of the most popular adaptations is to make double streusel coffee cake. Simply double the streusel topping for an extra sweet and decadent coffee cake. Chopped pecans are another delicious addition to the streusel topping.

You can also swap the fruit in this recipe (or omit it entirely). Apples are my favorite, but other popular options are peaches, blueberries, lemon blueberry, cherries, cranberry nut, and orange (don’t forget the orange zest!).

Ingredients

Streusel Topping:

  • 1/2 cup Original Bisquick Mix
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup cold butter (cut into cubes)

Coffee Cake:

  • 2 cups + 2 Tablespoons Original Bisquick Mix (divided)
  • 1 medium honeycrisp apple (peeled, cored, and diced; about 1 1/2 cups)
  • 1 cup whole milk
  • 2 Tablespoons granulated sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 375 F (190 C). Grease an 8 inch round or square pan.
  2. In a medium mixing bowl, mix together the Bisquick, brown sugar, and cinnamon. Add in the cubed butter and cut together using a pastry cutter (or mash together using a fork). It should look crumbly when it's done.  Set aside.
  3. To a small mixing bowl, add the diced apple. Mix in 2 Tablespoons of Bisquick until the apples are evenly coated (this will help stop the apples from sinking to the bottom of the pan).
  4. In a medium mixing bowl, mix together the Bisquick, milk, sugar, egg, vanilla, and cinnamon. Gently mix the coated apples through the batter, then pour into the prepared pan.
  5. Evenly sprinkle the topping over the top of the batter, and bake uncovered in the oven for 25-30 minutes (or until a toothpick inserted in the center comes out clean).
  6. Remove the coffee cake from the oven, and let it cool in the pan for at least 10 minutes before cutting and serving.
