And for all your chicken needs. Trust me, I am.

Super easy, flavorful and the perfect recipe for lunch, dinner or lazy Sunday afternoon.

The ingredients are simple and the most important is the star of the recipe. The chicken.

You need a good quality chicken. For this recipe I used organic chicken from the local store.

From there you can add whatever makes you happy. Lemon, garlic, onions, Italian parsley, celery and so on.

My favorite addition is potatoes and today we are making the oven roasted chicken and potatoes.

Life can be perfect, don’t you think. Just simple chicken, potatoes and Greek salad and I am happy.

If it is -36 C outside and tons of snow…who cares?

SHOPPING LIST FOR ROASTED CHICKEN

  • whole chicken (3 to 5 lbs or 1.5 kg to 2.5 kg)
  • potatoes
  • carrots
  • onions
  • garlic
  • lemon
  • salt
  • black pepper
  • oregano
  • butter
  • olive oil

EQUIPMENT NEEDED

-large roasting pan or baking sheet (or any pan that chicken can be baked happily)

-small sauce pan (to melt the butter)

ACTION TIME

MAKING Oven Roasted Whole Chicken – Best Chicken Recipe

Ingredients

1 whole chicken (3 to 5 lbs)

3 carrots

4 large potatoes

2 medium size onions

6 cloves of garlic

1 lemon, organic and washed

1/2 tsp black pepper

2 and 1/2 tsp salt

1 TBSP dry oregano

6 TBSP butter

3 TBSP olive oil

INSTRUCTIONS FOR MAKING THE BEST CHICKEN RECIPE

Melt butter in a small sauce pan and set aside. (be sure it is not completely melted)

Preheat oven to 425 F.

Rinse the chicken inside and out.

Then pat dry with paper towel.

IMPORTANT: Please be sure that chicken is as DRY as POSSIBLE. Why? Because it helps with browning.

Season chicken outside and inside with salt and pepper.

I used 2 tsp plus 1/2 tsp of salt and 1/2 tsp of ground black pepper. (you use salt and pepper to your taste)

Stuff the chicken cavity with 6 cloves of garlic, both halves of lemon.

OPTIONAL: You can add rosemary, Italian parsley, Thyme or any other herb you like to the chicken cavity.

Tie the legs together with kitchen string ( I did not)

Drizzle chicken all over with melted butter. Be very generous.

IMPORTANT: FOR MAXIMIZING FLAVOR USE THIS TRICK – TUCK UNDER OF CHICKEN SKIN A BIT OF BUTTER (or as much as you like)

Drizzle oregano all over the chicken.

BTW, you are almost done.

Add sliced onions, potatoes, carrots to the bottom of baking dish. (I don’t add salt but you can if you want to)

Drizzle olive oil over the veggies and toss to coat.

Place the chicken on top of vegetables. (breast side up)

BAKING THE CHICKEN

Bake at 425 F for 90 minutes or until done.

It is done when the internal temperature reaches 165 degrees.

Use a meat thermometer to check the temperature.

When chicken is baked remove from the oven.

Transfer the roasted chicken to the aluminum foil.

Be sure the whole chicken is covered with aluminum foil for about 30 minutes.

Slice the chicken onto your favorite platter.

Serve with a simple salad, potatoes and slice of my favorite bread.

Quick Note  

Butter – you can substitute butter with olive oil. Use organic olive oil if you can.

Chicken – use the good quality chicken when making this recipe. Visit your local farmers market for the best price and quality.

Potatoes – use the best potato for baking like Idaho Potatoes or Yukon Gold potatoes from Canada. For this recipe you can use whole potatoes or just cut potatoes in half length size.

Roasting Pan – if you don`t have roasting pan you can use a high-sided casserole dish, rimmed baking sheet, large skillet.
