Sharing this super easy recipe for these dark chocolate bites, right in time for Valentine’s Day. First of all, can you even believe that it’s already February? Also…can you believe this recipe only requires three ingredients?

These little dark chocolate bites are so easy to make and the best part is that there is no baking required. All you need is a few simple ingredients and some cooling time in the fridge before indulging.

One of the resolutions I’ve decided to stick to in the new year was to make more simple baking (or no bake) desserts that only require basic ingredients. I’ve been working on a few ‘healthier’ desserts that are lower in unrefined sugars, and a few of them are protein powder based. For example, I’ve been enjoying making energy or protein balls, which are the perfect little bites to have mid-afternoon to carry you over to dinner after those long days. Can’t wait to share a few of those recipes with you soon, so stay tuned.

What you’ll need for these Dark Chocolate and Strawberry Bites…

To make this fun treat, you will need a mini muffin pan or regular muffin pan (for bigger bites), muffin liners, fresh strawberries, strawberry jam, dark chocolate chips, white chocolate chips, and a double boiler to melt the dark chocolate (if you don’t want to do this in the microwave).

This recipe will make 12 mini bites, but if you are using a regular muffin pan, you’ll get about 6-8. They will be the size of one of those peanut butter and chocolate cups.

Can I use another berry, besides strawberries for this recipe?

Yes! You can substitute for any other berry variety; or even combination. My other favourite option for this recipe is to use raspberries or blueberries, even a combination of both. Simply swap out the jam and the fresh berries to whatever kind you like.

My favourite is still strawberries for this recipe as I am a huge fan of using them in desserts and baked goods. For example, these Strawberry & Lemon Scones and these savoury Strawberry & Goat Cheese Phyllo Tarts.

Let’s make these chocolate and strawberry bites…

We are going to start by adding our dark chocolate chips and jam into a microwave safe medium bowl. Heat in the microwave for 1 minute to start, then in 30 second increments until the melted chocolate and jam become a smooth texture when whisked together with a fork.

If you want to make this on the stove using the double boiler method, add in your chocolate chips and jam together and heat until the chocolate and jam are melted and smooth when whisked.

Then, you can either chop your strawberries into cubes or cut them into heart shapes, as I did here. The easiest way is to slice off the top, then cut in half, lengthwise. Using a small paring knife, cut out a “V” shape at the top of each strawberry so it resembles a heart.

Next, spoon batter into the lined muffin tins. Let the chocolate cool to room temperature for 5-10 minutes, top with strawberry cubes or heart shapes. Once cooled, you can melt some white chocolate in a small bowl using a microwave (in 30 second intervals) and drizzle on top of each chocolate mixture. To avoid making a mess in this step, I suggest getting a baking or cookie sheet and lining it with parchment paper before drizzling.

Allow to cool in the fridge for at least 20-30 to firm up then serve. Store in the fridge for 4-5 days in an airtight container for freeze up to one month.

 

Easy Dark Chocolate Bites with Strawberries

The perfect little chocolate bites, right in time for Valentine's Day. All you need to make this recipe is some dark chocolate chips, strawberries and some strawberry jam. You can also drizzle some white chocolate like I did for a little extra garnish. This recipe comes together in just a few minutes using basic ingredients.

Ingredients
  

  • 1 1/2 cups dark chocolate chips
  • 1/4 cup white chocolate chips
  • 3 or 4 strawberries depending on the size
  • 2 tbsp strawberry jam

Instructions
 

  • Add chocolate chips and strawberry jam into a microwave safe bowl.
  • Warm in the microwave 30 seconds at a time, until meted. Stir in between until smooth.

  • Full each cup 1/4 to a 1/2 full and top with a sliced strawberry.
  • Melt the white chocolate in the same method as above, and then drizzle over the chocolate bites.
  • Refrigerate for at least 30 minutes until firm.
  • Serve right out of the fridge.
