Vegan 7 Layer Dip

It is superbowl weekend which means it is time for some football food. When I think of football food I think of appetizers and snack foods. Once of the most popular foods consumed during the superbowl is chips and dip. That can be queso, guacamole, salsa, etc. So I decided to put together a healthier version of a 7 layer dip that combines all of them. Once everything is layered up, you just need some salty chips or even vegetables for a lighter option to dip them in.

Ingredients

This vegan 7 layer dip starts with some refried beans. You can buy canned refried beans or even make your own with just pureeing any kind of beans. Next up is the guacamole layer. You can just use store bought guacamole to make it super easy or a homeade version. To top the guacamole is some queso. I used vegan queso so that you can eat it cold. Since most vegan quesos are made from cashews they are delicious in this dip. Some of my favorite brands are Siete queso or Credo foods mild queso . Then comes the sour cream layer. To spice things up a little I mixed some vegan sour cream with enchillada sauce. This adds just a little bit of spice and flavor with the creamy sour cream. After the sour cream layer you have a choice of adding pico or salsa. I actually love both, but my preference is probably the mild salsa. It is still chunky but pairs with other creamy dips very nicely. To finish it off is a little iceburg lettuce for some crunch. Then I topped mine with some extra avocado slices and a little fresh cilantro.

I could probably eat this dip as a meal because it is so addicting with all the popular dips in one. You have best of both worlds having chips, and then all the dips mixed together. This is definitely a crowd pleasing appetizer, and I know when I make it for my family it is gone in a heartbeat.  I have already have made this recipe for my family and friends 3 times without anyone know it is a healthier and vegan. It is such a fun food to have not only for the superbowl, but really any sporting event. There is just something about food and watching sports that I love. Vegan 7 Layer Dip

A healthier version of 7 layer dip with beans, queso, guacamole, sour cream, and salsa

Ingredients

  • 1 can refried beans
  • 10-12 oz vegan queso credo or siete, about 1 1/2 cups
  • 10-12 oz guacamole (store bought or homeade) about 1 1/2 cups
  • 8 oz vegan sour cream forager
  • 1/4-1/2 cup enchilladas sauce depending on spice
  • 1/2 cup mild salsa
  • 1/2 cup shredded lettuce
  • optional garnish: avocado slices, cilantro leaves, olives

Instructions

  • Take a 8x8 glass baking dish or plate and start layering each element
  • 1st spread out refried beans evenly across pan
  • 2nd spread the guacamole evenly
  • 3rd spread the queso on top of guacamole evenly
  • In a small bowl mix the sour cream and enchiladas sauce
  • 4th layer the sour cream mixture over queso
  • 5th add salsa over sour cream
  • 6th sprinkle the lettuce on top of the dips
  • 7th top with optional avocado and cilantro
