Though chia seeds have been there in the market for a pretty long time, it was only a few years ago that I came to know about them from an article. Initially, their consumption was limited to smoothies, but when puddings made with chia seeds came popping up on my Instagram feed, I knew it was time for me to give it a try! And to my surprise, it turned out awesome, and I was hooked.

When the temperature rises, our breakfast staple oatmeal takes a backseat and enters CHIA SEED PUDDING. Filled with wholesome ingredients, this creamy Blueberry Chia Seed Pudding is a healthy, nourishing, and satisfying breakfast that comes together in no time. All you have to do is blend, mix, and set it into the refrigerator overnight. And, you will wake up to a delicious meal ready for you in the morning with minimal effort! Brilliant, isn’t it? Scented with vanilla, cinnamon and loaded with fresh blueberries, this pudding is simply amazing!

Despite their small size, chia seeds are an excellent source of fiber, omega-3 fatty acids, proteins, iron, and calcium. They’re low in carbs and high in fiber hence a great addition to a low-carb keto diet.

You can serve it plain as it is, or just top it with other toppings like almond flakes, strawberries, or some more blueberries. I love adding a little granola on top for a crunchy texture!

This pudding is perfect to include in your breakfast meal prep routine, but also decadent enough to be served as an afternoon snack.

Ingredients:
  • 1 cup almond milk(or any other milk of your choice)
  • 1/2 cup fresh or frozen blueberries
  • 2-3 tablespoon honey/maple syrup (more or less, as per your taste)
  • 1/4 tsp vanilla extract
  • 1/4 tsp cinnamon powder
  • 1/4 cup chia seeds
  • Optional Toppings:fresh berries, granola, almonds slices, or coconut flakes

Instructions:
  1. In a blender, combine almond milk, blueberries, honey, vanilla extract and the cinnamon powder and blend until smooth.
  2. Whisk in the chia seeds. Let the mixture sit for 5 minutes, then whisk again.
  3. Pour into jars and refrigerate for a minimum of 5 hours or overnight.
  4. Top with your favorite toppings and enjoy!
