Vegan Cashew Puff Energy Balls

Since we discovered them, Energy Balls have become our favorite snack! We like to share all of the new recipes that we come up with from time to time, because this recipe is a winner when it comes to variety. The main ingredients for these Vegan Cashew Puff Energy Balls were raw cashews, peanut butter, quinoa puffs, rolled oats, and maple syrup.

If you enjoy protein or energy bars or balls, as we do, you will love this recipe. It’s not overly sweet, contains only healthy ingredients, and is quite simple to prepare.
Cashews Puff Energy Balls
The holidays are over, so now is a great opportunity to get back into a healthy routine. I’m not sure about you, but we don’t like giving up sweets, that’s why we created these balls as a wonderful alternative to any unhealthy snacks. All of our energy ball recipes are gluten-free, dairy-free, sugar-free, and vegan.

Vegan Cashews Energy Balls
Prep time: 10 min   Cook time: 10 min   Total: 20 min   Servings: 10




 

 

INGREDIENTS

  • 4.8 oz (135 g) ground rolled oats
  • 6.3 oz (180 g) ground cashews
  • 1.6 oz (45 g) quinoa puffs
  • 5 tablespoons maple syrup
  • 3.3 fl oz (100 g) peanut butter
  • 1/2 teaspoon pumpkin spice (OPTIONAL)

INSTRUCTIONS

  • In a large bowl add all dry ingredients and stir until combined. Then add peanut butter and maple syrup and using a spatula stir everything until dough is formed. If the dough is too dry you can add one teaspoon of peanut butter. If it’s too wet for your taste just add more quinoa puffs or ground oats.  
  • Form mixture into balls and repeat until no dough remains. Let them cool for at least 30 minutes in the fridge.
  • Serve and enjoy Vegan Almond Energy Balls the way you like!
