Smoked Salmon Dutch Baby

Dutch Baby is a simple but delicious recipe that uses a cast iron pan to create a fluffy pancake. This one is topped with smoked salmon and fresh arugula.

Ingredients

  

  • 4 eggs
  • 1 cup all purpose flour
  • 1 cup milk
  • ½ tsp salt
  • 4 tbsp melted butter
  • Smoked salmon
  • Arugula
  • 1 lemon sliced
  • ¼ tsp parsley

Instructions

 

  • Place a seasoned cast iron pan in a 450 degree oven until preheated.
  • In a blender or with an immersion blender, mix together the eggs, flour, milk, salt, and 2 tbsp melted butter.
  • Once preheated, pull the cast iron pan out of the oven, pour in the melted butter to coat the bottom and then pour in the batter and place back in the oven. Cook for 18 minutes before removing and quickly adding the smoked salmon, parsley, lemon, arugula, and a pinch of black pepper.
  • Serve right after it comes out of the oven so it stays poofed up.

Notes

Note that to be extra fancy, you can clarify your melted butter before using. To make this, just slowly melt the butter in a pan and skim off the fat that layers the surface.
