Vegan Coconut Oatmeal

The holidays are over, and it’s time to get back into shape! If you’re seeking for healthy breakfast recipes, we’ve got you covered. Our Vegan Coconut Oatmeal is the perfect morning treat for anyone who enjoys coconut. The base ingredients are rolled oats, coconut yogurt, and coconut flakes.

This oatmeal is so refreshing and warm at the same time. We recommend serving it warm rather than hot! As a topping we added some raspberries, since they go nicely with coconut. For some extra protein or choice were walnuts, but choose whatever you like the most.
Coconut Oatmeal
This recipe is 100% vegan, gluten-free, dairy-free, and sugar-free. We usually grind our rolled oats but this time we skipped that part since we needed something quick.

Homemade Vegan Oatmeal

INGREDIENTS

  • 7 tablespoons whole rolled oats
  • 8.5 fl oz (250 ml) non-dairy milk or water
  • 1 tablespoon coconut flakes
  • 2 tablespoons coconut yogurt
  • 1/4 teaspoon cinnamon
  • maple syrup – per taste

TOPPING

  • chopped walnuts
  • raspberries
  • coconut flakes

INSTRUCTIONS

  • In a small size saucepan, add whole rolled oats, cinnamon, and water or non dairy milk. Stir everything well and bring to boil. Stir constantly until the mixture starts to thicken or until your desired thickness has been reached. When done, remove from heat and stir in maple syrup and coconut flakes. Let it cool for about 2-3 minutes and then stir in coconut yogurt.
  • Transfer the mixture into a small bowl. Add the topping ingredients: raspberries, walnuts, and coconut flakes. Play with toppings until you find you perfect combo.
