In autumn and winter, you can’t go wrong with a simple apple dessert. We made these Apple Custard Slices for Christmas Eve dessert this year, and they were a hit. We served them slightly warm with a generous scoop of vanilla bean ice cream. Everyone loved it, and we loved how simple it was to make it ahead. This recipe is perfect for celebrations, holidays, or sweet weekend treats. It’s made of four layers. For the base, we have a brittle, buttery homemade crust, followed by a layer of vanilla custard and grated apples, and last but not least, a layer of shredded homemade buttery dough to create a lovely golden-brown crumble on top. So good!

We created these gorgeous baked apple slices in collaboration with a Slovenian company called  Evrosad. We used their delicious Evelina apples (also known as Surprisingly apple). They add the perfect ratio of sweetness and freshness to this dessert. These are the top reasons why we like it so much:

How to make Apple Custard Slices at home

Making these irresistible Apple Custard Slices at home is simple and easy. We will make four layers of different flavors and textures. Below you can find the whole method with all the ingredients. Here is a quick overview of the recipe for easier preparation.

  1. Make the brittle, homemade dough, and bake half of it as a base for this dessert.
  2. Cook the vanilla custard and spread it over the baked dough.
  3. Sprinkle the grated apples over the custard.
  4. Sprinkle the grated dough over the apples.
  5. Bake.
  6. Bring to room temperature, then cut into slices and serve.

Storing and freezing

Feel free to store these Apple Custard Slices in two ways.

First, leave the slices to cool to room temperature. We recommend leaving them at room temperature for an hour before serving or storing them.

Keep them chilled in a sealed airtight container in the fridge for up to 4 days.

We can easily freeze the Apple Custard Slices too. Freeze the whole dessert or separate slices. Keep them in an airtight container or freezer bag. Place in the freezer for up to 1 month. Before serving, defrost by bringing to room temperature. Feel free to serve them slightly warm by placing them in the preheated oven for a couple of minutes or in the microwave for a couple of seconds.

METHOD

  • preparation

    Place the rack in the middle of the oven and preheat it to 200 °C / 390 °F. Line a 20 cm x 25 cm (8-inch x 9-inch) deep baking dish with parchment paper with a few inches (or centimeters) of overhang off the sides.

    Stir together the flour, brown sugar, ground almonds, and a pinch of salt in a bowl. Add the cold butter and rub the mixture between your fingers to get a sand-like texture. Add the milk and knead into a smooth batter. Divide the dough in half, wrap one half in clingfilm, and place in the freezer. Spread the other half evenly over the prepared baking dish. Place in the preheated oven and bake for 15 minutes at 200 °C / 390 °F. Once it bakes, remove it from the oven and set it aside for 5-10 minutes. Reduce the oven temperature to 180 °C / 350 °F.

    Pour the majority (300ml) of milk into the saucepan. Place over medium heat and bring to a boil. Pour the rest of the milk (60ml) into a bowl. Add the vanilla custard powder and sugar. Using a whisk, stir to combine. While whisking, continuously pour the boiling hot milk into the custard mixture to mix. Then pour the mixture back into the saucepan and place over medium heat. Cook for 3 minutes for the mixture to cook. Stir regularly to prevent any lumps from forming. Remove from the heat and stir in the butter. Set aside for 5 minutes for the mixture to cool slightly, then stir in the egg yolk.

    Peel the apples, remove the core and grate them into a bowl. Add the spices, brown sugar, cornstarch, and lemon juice. Stir to combine.

    Spread the vanilla custard mixture over the baked and cooled dough. Spread the apple mixture over the custard mixture. Gently press the apple mixture toward the custard. Remove the dough from the freezer and grate it. Sprinkle over the apple mixture. Place in the preheated oven and bake for 45 minutes at 180 °C / 350 °F. Set aside for the dessert to cool, then cut into slices and serve. Optionally serve with a scoop of vanilla ice cream.
