Crescent roll recipes are some of my favorites for holiday appetizers. There’s so much you can do with a tube of store-bought crescent dough, and no one can resist how it bakes up into buttery, pillowy goodness. If you make Homemade Cranberry Sauce for Thanksgiving, double up the recipe, and use some of it to make these Cranberry Brie Bites. (Or if you have leftover cranberry sauce from Thanksgiving, freeze it and use it to make these appetizers for Christmas or New Year’s Eve!)

Cranberry Brie Bites Recipe!

Sometimes I think I could just throw a holiday party and only serve appetizers! If you’ve ever stood around the kitchen filling up on Cocktail Meatballs, Pigs in a Blanket, and other starters and then not had room for dinner, you can probably relate. There are times when appetizers are the best part of a get-together, and that’s definitely true with these Cranberry Brie Bites!

The brie and crescent dough are both so rich and buttery that the tartness of the cranberry sauce is the perfect complement. I love adding fresh rosemary sprigs too, not just for the herbaceous flavor, but also because the green rosemary looks so festive paired with the deep, red cranberry sauce! When you bite into these, the melty brie oozes out and it’s absolutely heavenly. Trust me when I say, these easy cranberry brie bites with crescent rolls are going to disappear as soon as you pull them out of the oven.

Ingredients for Cranberry Brie Bites

  • All-purpose flour – Just a bit to dust your work surface.
  • Crescent dough – Buy the refrigerated kind that comes in a tube. Get an extra tube, and make Pigs in a Blanket too! Pillsbury crescent rolls are my favorite but any brand will work.
  • Brie cheese – You’ll need an entire wheel. You can keep the brie cheese peel on, it is totally edible!
  • Whole berry cranberry sauce – Not the jellied kind! The whole berries are so much better.
  • Fresh rosemary sprigs – Sprigs of thyme will work too, or you can omit the fresh herbs.

Variations

Here are a few ingredient substitutes and variations that work well in these homemade cranberry brie bites.

  • Use raspberry jelly in place of cranberry sauce to make raspberry brie bites.
  • Replace the brie cheese with blue cheese for a more intense cranberry bite.
  • Spread the cranberry sauce over the entire wheel of brie. Then, wrap the whole wheel in the crescent rolls. Bake until golden brown, and serve the whole baked brie with some crackers. A big, melty brie wheel is always delicious!

How to Make Cranberry Brie Bites

  1. Prepare: Preheat your oven to 375ºF, and spray a mini muffin tin with nonstick cooking spray.
  2. Cut the dough: Lightly flour your work surface, and unroll the crescent dough, pinching the seams together. Cut the dough into 24 squares—you can use a large chef’s knife or a pizza cutter.
  3. Assemble: Place each of the squares into the muffin tin cups, then nestle pieces of brie into the dough and top with a spoonful of cranberry sauce, followed by rosemary.
  4. Bake: Place the Cranberry Brie Bites in the oven, and bake until the crescent dough is golden brown, which takes about 15 minutes. Serve warm, while the cheese is melty and the dough is flaky and crisp!

Quick Tip

Make sure you spray the muffin tin well so the brie bites pop out easily. Also, be sure that the crescent roll dough goes all the way up the sides of the muffin tin. If the cranberry sauce bakes to the side of the tin, they can be tricky to remove! Finally, pop the bites out of the muffin tin while they are still warm so that they come out nice and easy.

How to Store Cranberry Brie Bites

Cranberry Brie Bites are best eaten fresh, but if you have leftovers, you can store them in an airtight container in the fridge for up to 3 days. Reheat them in the oven at 350ºF until the crescent roll dough is crisp around the edges and the cheesy is melty and warm.

Cranberry brie bites do not freeze well! The crescent rolls do not hold up well in the freezer. However, these quick cranberry brie bites are so easy to make that you can whip them up fresh in no time!

FAQs

Is crescent dough sheet the same as puff pastry?

No, puff pastry is much flakier than crescent dough. That said, you could use puff pastry in this recipe for Cranberry Brie Bites instead of crescent dough, but the results won’t be quite the same—instead of pillowy dough, you’ll have flaky layers.

What is good on top of brie?

If you want to mix things up with this recipe, you can try caramelized onion jam, fig jam, or apricot preserves. You can also add some chopped pecans to the cranberry sauce for a bit of crunch!

Can cranberry brie bites be made ahead of time?

The best thing about these Cranberry Brie Bites is the oozing, gooey cheese in each bite, so they can’t be baked ahead of time, but they can be assembled up to a day in advance. Once you’ve assembled them in the muffin tins, pop them in the refrigerator for up to a day.

Ingredients  

  • all-purpose flour for dusting the dough and cutting board
  • 8 ounces crescent dough (1 tube)
  • 8 ounces brie cheese (1 wheel)
  • 1 cup whole berry cranberry sauce not jellied
  • fresh rosemary sprigs

Instructions 

  • Preheat oven to 375°f degrees. Spray a mini muffin tin with cooking spray. Spread a little flour out onto your counter. Then roll out crescent roll dough and pinch seams together. Cut crescent roll dough into 24 equal-sized squares. Place squares into muffin tin slots.
    8 ounces crescent dough, all-purpose flour
  • Cut brie into small pieces and place inside the crescent dough squares. Top with a generous spoonful of cranberry sauce, and a little sprig of rosemary.

  • Bake until the crescent dough is a light golden brown (about 15 minutes). Then serve warm!
