Garlic Cheddar Mashed Potatoes

Creamy and cheesy mashed potatoes filled with minced garlic, and cheddar cheese. This dish is the perfect side dish to go along with a meal of meatloaf or chicken. You can even serve this dish for any holidays or special occasions, such as Thanksgiving or Christmas. It is so quick and easy to make these creamy and cheesy mashed potatoes. These creamy and cheesy potatoes are so quick and easy making them simple enough for a weeknight meal.

The potatoes are started by boiling peeled and cubed potatoes. Once they are fork-tender, drain them and place them into a large bowl. Mash potatoes with butter, shredded cheddar cheese, minced garlic, salt, pepper, garlic powder, and dried parsley. You can use either a hand masher or mixer to mash the potatoes. Using a hand mixer will make the potatoes more smooth and creamy.

Ingredients
  

  • 2 pounds russet potatoes, peeled and cubed
  • 1/4 cup butter, softened
  • 1/2 cup shredded cheddar cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley

Instructions
 

  • Place potatoes into a large saucepan over medium heat, cover with water and bring to a boil. Cook until the potatoes are fork tender. Drain and place into a large bowl.
  • Mash the potatoes with butter, cheese, minced garlic, salt, pepper, and garlic powder. Mash until smooth.
