Chinese Pineapple Fritters with Spiced Toffee Sauce Recipe

Chinese pineapple fritters are simple to cook and absolutely delicious, fresh pineapple slices in a golden brown crispy vanilla batter,  sprinkled with a touch of sugar, and served with a cinnamon and ginger toffee dip

Recipe Ingreds

Fritters

  • 1 whole pineapple
  • 240 grams plain flour
  • 0.25 tsp salt
  • 1 . sunflower oils (for frying)
  • 100 grams caster sugar
  • 1 whole egg
  • 0.5 tsp vanilla extract
  • 1.5 tsp baking powder
  • 230 ml milk(whole)

Sauce

  • 25 grams butter
  • 60 ml double cream
  • 25 grams light brown sugar
  • 75 grams syrup
  • 0.5 tsp cinnamon
  • 0.5 tsp ground ginger
  • 1 whole star anise

Recipe with pictures Steps

Step 1

  • add the butter, sugars and syrup to a pan
  • Bring to the boil and boil for a few minutes
  • Add the cinnamon, ginger and star anise
  • cook gently for five minutes
  • Add the cream
  • cook until the mixture is thick and syrupy

Step 2

  • peel and cut the pineapple into rings
  • cut the rings into halves
  • place on kitchen paper

Step 3

  • place the flour, baking powder and salt in a bowl
  • make a well in the centre of the flour
  • beat the egg
  • add the egg to flour and gradually incorporate the flour adding the milk gradually beat until you have a smooth batter
  • the batter needs to be quite thick to coat the pineapple so if you don't need all the milk don't use it all
  • add the vanilla essence and sugar to the batter and whisk

Step 4

  • heat about 21/2 cms of frying oil in a frying pan
  • Drop a breadcrumb into the oil to check its hot enough it should fizzle
  • dip the pineapple in the batter and place in the oil
  • cook in batches and keep warm in the oven
  • cook till golden brown
  • Drain on kitchen paper

Step 5

  • Dust the fritter with the remaining caster sugar
  • place the fritters in a bowl

Step 6

  • place the toffee dipping sauce in a bowl
  • serve with the pineapple fritters

How to make Chinese pineapple fritters

Simple to cook golden brown fritters encasing delicious fresh pineapple simply dusted in sugar and served with a toffee sauce. To make these crispy fritters peel and cut the pineapple into rings and then halves. Make a batter by creating a well in the flour adding the egg incorporating into the flour with the milk, and adding the sugar and vanilla essence. Dip the pineapple into the vanilla batter and shallow fry the pineapple fritter  till crisp and golden brown, drain on a piece of kitchen paper and then coat in sugar

Making the spicy toffee sauce

melt the butter, and brown sugar in a pan and then lightly spice with cinnamon, ginger, and star anise. cook till thick and dipping consistency then add the cream. Serve with the warm toffee dipping sauce.

Alternative Ingredients

Pineapple

These fritters can be made with fresh or tinned pineapple, if your using tinned make sure you drain fully, if the slices are too wet the batter will not stick, if this is the case lay the slices on some kitchen roll to drain a little before dipping them in the batter.
