Almond-Hazelnut Quinoa Energy Bars

We’ve been obsessed with quinoa puffs ever since we discovered them. They are much easier to work with and incorporate into recipes than rice puffs. They can be used in a variety of recipes, including Almond-Hazelnut Quinoa Energy Bars, which we recently developed.

These satisfying soft Quinoa Bars are super simple to make – no baking required, just combine 4 ingredients and that’s it! This is the real deal if you’re looking for a quick post-workout snack or just a bite of something semi-sweet! 🙂

Quinoa Energy Bars
Prep time: 1 h   Cook time: 10 min   Total: 1 h 10 min   Servings: 8




 

 

INGREDIENTS

  • 1/2 cup (about 112g) hazelnut butter
  • 3 tablespoons almond flour
  • 1.8 oz. (50g) quinoa puffs
  • 1/4 cup (about 60ml) maple syrup

INSTRUCTIONS

  • Line a small baking dish (8” square) with a parchment paper. Set aside.
  • In a large bowl mix together hazelnut butter, almond flour, quinoa puffs, and maple syrup. Stir everything well until evenly combined.
  • Transfer the mixture to a baking dish and press it firmly using a back of a spoon or your fingers until flat layer is formed. Make sure to spread it evenly. 
  • Refrigerate for at least 1 hour. When ready cut into bars or squares. Keep in fridge when not eating. This way you’ll prevent them from falling apart.
  • Store it for up to 2 weeks in an airtight container in the fridge. Enjoy your Almond-Hazelnut Quinoa Energy Bars!
