Inspiration for Vegetable Chips

Our inspiration for this recipe came from one of our favorite snacks, Terra Chips. The one problem with these chips are that they’re quite expensive per bag. Therefore, we figured why not try to recreate them ourselves?!

We looked up the types of roots/vegetables that are used in Terra Chips, pulled out the ole’ Air Fryer, and fired it up!

So technically, this post is 5 recipes in one! Can’t beat it! If you wanted to just try individual vegetables instead of all of them, the same principles apply for them all. Here we made the following and combined them all in the end:

Tips for making Air Fryer Vegetable Chips

As it turned out, this process was a bit more tedious than we expected. The air fryer we own is big but not huge. If you’re looking to buy an air fryer for the first time or thinking about upgrading your air fryer, check out the Ultimate Air Fryer Guide, brought to you by none other than GradFood!

The limiting factor in this recipe was the fact that we couldn’t cook them in more than 2 layers or else they would not evenly cook through. Fortunately our air fryer has two platforms, allowing for about 4 layers, but still it took quite a few batches to cook all of them (perhaps next time, we wouldn’t use quite so many vegetables).

Another suggestion is to wait completely for the sliced vegetables to dry out before air frying them. If not, they can have a tendency to not come out quite as crispy as they should be. Next, try serving them with an accompaniment. In this case we used bruschetta using fresh tomatoes from our garden but you can also try salsa, hummus, etc. And if not, they’re awesome just plain!

And finally, realize that some of these crisp at different times than others. In particular, we found the yucca to be the crispiest of them.

Air Fryer Vegetable Medley Chips

These crunchy savory vegetable chips are much cheaper than the pre-made Terra chips.

Ingredients

  

  • 1 sweet potato
  • 2 taro roots
  • 1 yucca root
  • 2 beets
  • 2 golden beets

Instructions

 

  • Peel the taro and yucca roots. Use a mandoline to thinly slice all vegetables to about 1/16 inch. Soak/rinse all vegetables individually in cold water until liquids run clear (except the water from the beets will continue to be colored but just rinse these as much as the others).
  • Thoroughly dry out the chips on paper towels. Once dry, toss each individually with 1 tbsp oil and a pinch of salt pepper, allowing them to get consistently coated.
  • Preheat air fryer to 350 degrees. Air fry the vegetables in batches for about 20 minutes per batch, flipping every 5 minutes. Try not to add more than 1-3 layers or else they will be inconsistently cooked.
  • When all vegetables are cooked, combine all chips into one bowl. You can add additional salt per prefer
