- 1 cup warm water
- 2 cups all-purpose flour
- 1 cup whole wheat flour
- 1/2 tsp salt
- 2 TBSP plus 1 tsp olive oil
- THE CHIMICHURRI:

- 1/2 ounce (1/4 cup tightly packed) freshly chopped cilantro
- 1/4 ounce (2 TBSP tightly packed) freshly chopped oregano
- 1/2 cup olive oil
- 2 garlic cloves, minced
- 2 TBSP red wine vinegar
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
- THE CHEESES:
- 8 ounces mozzarella cheese, shredded
- 1 ounce freshly grated Parmesan cheese
Directions
- THE DOUGH:
- In a large mixing bowl stir together the yeast and warm water. Stir in the flours, salt, and 2 TBSP olive oil until well combined and a dough is formed.
- Knead the dough by hand for about 5 minutes on a lightly floured surface.
- Form the dough into a ball and place in a large clean bowl. Drizzle 1 tsp of olive oil over the dough and flip around a few times to coat in the oil. Cover the bowl and put in a warm place to rise for about 1 hour.

- Combine all the chimichurri ingredients in a bowl until well combined. Cover the bowl and refrigerate until ready to use.
- MAKING THE PIZZA:
- Preheat the oven to 450°F. Lightly oil a large 16-inch pizza pan or a rimmed 18x13-inch baking sheet.
- Stretch or roll out the dough to fit in your pan then spread the top of the dough all over with the chimichurri sauce.
- Bake in the preheated oven for 10 minutes.
- Remove from the oven and sprinkle the top evenly with the mozzarella and Parmesan cheese.
- Place back in the oven and bake for 8 to 10 more minutes or until cheese is lightly browned.
