Totchos have been a thing for a while. Mostly versions made like traditional nachos and they are fabulous. Alternatively, making this dish with tender pulled pork is amazing. You must try.

  • Slow Cooker: This meal takes little time, the slow cooker does most of the work. This is the best method for cooking pulled pork, in my opinion. Low and slow.
  • Easy Ingredients: You can do fancy and make your seasonings and sauce from scratch or alternatively, make it quick by buying store bought versions.
  • Family Friendly: Let’s face it, put almost anything on a tater tot and your family will love it.

  • frozen tater tots
  • baked beans
  • Monterey jack cheese
  • BBQ sauce
  • Salt

How to Make BBQ Totchos- Step by Step

Steps to assemble the totchos. Cooked tots with sauce, pork and cheese added.
  • Cook Pork:   First, place the pork shoulder in a slow cooker and then add the water and seasoning. Cook the meat on low for 8 hours. When done, shred and return to pot and mix.
  • Tots: Second, bake tots following package directions.
  • Assemble: Finally, remove the tots from the oven and spread the meat over the top. Top the meat with baked beans and shredded cheese and return to the oven to bake to melt cheese.
  • Top: Before serving, top with BBQ sauce and green onions.

Ingredients

  • 2 pounds pork shoulder
  • 1 cup water
  • 1 tablespoon BBQ seasoning
  • 32 ounce tater tots, frozen bag
  • 28 ounce baked beans, 1 can
  • 2 cups Monterey jack cheese, shredded
  • 1 cup BBQ sauce
  • Salt
  • Green onion for garnish

Instructions

  • Place the pork shoulder in a slow cooker. Add the water and season with BBQ seasoning. Cook the meat on low for 8 hours or high for four hours. When the meat is cooked through, remove it from the pot and shred it. Return to the pot and stir to combine the meat and seasoning.
  • When ready to prepare the totchoes, preheat the oven to 425 degrees. Spray a large baking sheet with nonstick cooking spray and spread the tater tots in an even layer on the sheet. Spray the tots with nonstick cooking spray and season with salt. Bake in the preheated oven for 30 minutes, until crispy.
  • Remove the tots from the oven and spread the meat over the top. Top the meat with baked beans and shredded cheese and return to the oven to bake for 10 minutes, until cheese is melted.
  • Before serving, top with BBQ sauce and green onions.
