How to Make Baked Buffalo Chicken

These are the basic steps for making homemade hot wings. Please refer to the recipe card below for more detailed instructions.

Baking the wings.

STEP 1: PREP

First, preheat oven to 425F and then line a cookie sheet with parchment paper or a silicone baking mat.

STEP 2: SEAR

Second, place 1 Tablespoon of oil in a cast iron skillet over medium heat and next pat the chicken wings dry with paper towels and add in batches to the skillet. Next, pan sear the chicken wings on each side until golden brown, about 2-3 minutes per side. Repeat with remainder.

STEP 3: BAKE

Next, bake chicken wings for 15-20 minutes, until an inserted meat thermometer reads 165F.

STEP 4: SAUCE

Then in a small bowl, stir together the sauce ingredients of melted butter and buffalo sauce, adjusting the measurements to taste.  Finally, place the chicken wings in a bowl and pour in the warm sauce and then toss the chicken wings until fully coated. Serve warm.

  • 2 pounds chicken wings
  • 2 Tablespoons oil, as needed
  • 2 Tablespoons melted butter, optional
  • 2 Tablespoons buffalo sauce
