My Quick No Fuss Eaton Mess is a dessert that can be thrown together in 20 minutes. Absolutely no kitchen skills are required, the messier it is the tastier it looks!

I’ve been making this Quick No Fuss Eaton Mess for over 10 years. This showstopper always impresses my dinner guests. I love to see the delight on peoples faces when I bring it to the table. It looks so incredible that my guests think it’s taken hours to make, when in fact its ridiculously easy.

The Delectable Garden turned 4 this week. I can’t believe it’s been 4 years since I started this blog. So much amazing stuff has happened since starting my blog. I’ve had influential people try and like my recipes, worked with brands on exciting campaigns, but best of all I’ve connected with some wonderful people and seen so many of you try my recipes. I feel so lucky having a hobby I love that brings people enjoyment.

To celebrate my blog birthday and thank you for 4 wonderful years I’ve decided to share my Quick No Fuss Eaton Mess recipe with you. It’s my favourite summer dessert and I know you and your families will love it as much as I do. It’s light and fresh, a perfect crowd-pleaser after a BBQ.

Missing Strawberries!

I wish I could say the strawberries in my Quick No Fuss Eaton Mess photos are homegrown, but I can’t. Ralph and Edith managed to eat all but 3 of them when Gary and I had our backs turned. I planted some wild strawberries this year. They haven’t ripened yet so I will keep a closer eye on the pooches when they do start to ripen.

No Fuss

Whip cream, blitz strawberries, crumble meringue nests and layer. It’s so simple you don’t have to prep anything ahead of time. It only takes 20 minutes start to finish.

The key to my Quick No Fuss Eaton Mess is fresh ripe strawberries and double cream that has been whipped to perfection.

If you have a Pick Your Own producer near you I recommend using these for your strawberries. Not only will you get the freshest strawberries, you’ll be supporting local businesses and your family will have a fun day out.

The only part of my Quick No Fuss Eaton Mess that needs your attention is the whipped cream. You want to whip it until you reach soft peaks, then give the cream short blasts until it can hold it’s shape. Soft peaks is when the cream is thick enough to hold it’s shape briefly. If you under whip your cream the Eaton Mess mountain won’t hold its shape, whip too long and the texture won’t be soft and silky. So pay attention when whipping!

I use an electric whisk on high for about a minute. I then give it short sharp bursts with the whisk until I have reached the right consistency.

Equipment

Ingredients

  • 400 ml double cream
  • 8 meringue nests
  • 500 g strawberries stalks removed
  • 20 g icing sugar
  • 10 ml fresh lemon juice
  • 1 tsp vanilla extract

Instructions

  • Chop 300g of the strawberries. I chop small strawberries in half and larger strawberries into quarters.
  • Pop the remaining 200g of strawberries into a blender with 10g of icing sugar and the lemon juice. Blitz until smooth. You could also use a hand blender.
  • Pour the double cream into a bowl, add 10g of icing sugar and the vanilla extract. Whisk until you reach soft peaks, then give it short sharp burts until the cream can just hold it's shape. This doesn't take long with an electric whisk so keep an eye on it. See notes in the blog post for the achieving the right consistency.
  • You will need a large serving plate to assemble the Eaton Mess. Crumble 2 meringue nests on the serving plate. Dollop a quarter of the whipped cream. Top with a quarter of the chopped strawberries. Drizzle over some strawberry puree and repeat until you have an Eaton Mess mountain. Serve straight away with any remining strawberry puree.
