This a very quick and easy stuffed cherry peppers recipe. These little cherry peppers are great for stuffing. Like any pepper, these Capperino peppers are at their best when they are recently picked and fresh. These small red round peppers have a moderate to mild heat which make them a great appetizer when stuffed with cheese.

Long week of work and need a quick appetizer for Friday night on the deck? Having a few friends over on Saturday night and need a quick appetizer to impress them? Read on to learn how stuffed cherry peppers on the grill is a tasty easy appetizer that rocks!

First step to make this quick appetizer is to cut off the pepper tops and take out and seeds.

Next, stuff the peppers with a cube of mozzarella cheese. I’m sure you can use different types of cheese, but mozzarella just feels like the best fit. But go crazy and try different cheeses just as long as it’s a good melting cheese.

Line the stuffed peppers on your grill off direct heat. For this appetizer I fire up my propane grill. I’ll pop these bad boys on the grill for twenty minutes at 300 degrees.

Only takes the cheese a few minutes to melt when you close the grill top.

Once the cheese begins to melt put the pepper tops back on top of the peppers to help keep the cheese in place. Because these peppers are small and round they should fit nicely between the grill grates so they shouldn’t move too much on the grill while softening up.

Take them off after 20 minutes. Pop the tops off and enjoy.

  • Start with a clean grill. Dirty grill grates cause grill flare ups.
  • If possible, buy the peppers at a farm or farmers market for the freshest peppers.

Ingredients

  • 6 Capperino Peppers or any other mild small pepper
  • 6 Cubes of Mozzarella Cheese

Instructions

Wash and cut the tops off the peppers.

Take out any seeds inside the peppers.

Place one cube of mozzarella cheese inside each pepper.

Place on the grill for twenty minutes on indirect heat at 300 degrees.

After 5 minutes of grilling the cheese should begin to melt. At that point place the tops of the peppers back on each pepper.

Take off the grill after the peppers are soft and the cheese is melted.
