Artichoke and Kale Naan Pizza

Today we’re talking about naan pizza! Artichoke and Kale Naan Pizza has always been around for me but it wasn’t until I started looking at recipes from food bloggers way back when that I found it to be a widely accepted, great idea. I love using frozen naan for the pizza dough, adding my sauce and toppings and quickly baking them in the oven. I’ve found this to be a great snack in college and a great, easy meal that literally comes together in minutes when I worked some jobs that were busier than I cared for. I made this naan pizza a little fancier than the classic because..why not?! And dressed it up with vegetables, bruschetta (on one), Bright and Fresh Basil Pesto (on the other), and fresh mozzarella.

Why You’ll Love This Naan Pizza:

  • A great, quick meal – This pizza really does come together so SO quickly! We dress the naan and pop it into pre-heated oven in about 10 minutes and it’s good to go. This recipe is a go-to when there are too many errands to run or if you’re just too tired and a little hangry!
  • A great date/family night idea – This pizza can be really fun as a personalized pizza. Just lay out a few different toppings ahead and each person can make their own little pizza, exactly as they like it. All you need is an extra protein around and maybe another vegetable and the combinations can be endless.

This pizza tastes so good that you won’t believe how healthy it is.

Process:

We start out by preheating the oven to 450 degrees Fahrenheit and pulling our frozen naan out. I love this naan from Trader Joe’s. I find them to be the right size for what I want and fit into my typical (but not strict) calorie goals. If you have another naan that is your favorite that should work easily here too!

Next, we start toppings!! This is definitely the fun part. You add your sauce, and toppings, and layer the cheese on top. For the pizza in the photos – I used marinated artichoke hearts and fresh kale ripped into big chunks.

Fresh mozzarella is a great topping for this naan pizza!

Then, once the oven is preheated, we’ll add the naan straight into the oven. Be sure the cheese isn’t hanging off the sides to ensure nothing falls off and burns on the bottom.

The naan pizzas are done when the bread is cooked through and the cheese is nice and melted! I love to garnish with additional toppings here – Quick Pickled Red Onions, parmesan, honey, and hot pepper flakes are a go-to in The Happy Haandi House!

  • 1 Sheet Pan

Ingredients
  

For the Pizza:

  • 2 pieces Naan
  • 8 oz Fresh Mozzarella
  • 3 tbsp Pesto (store or from my recipe!)
  • 3 tbsp Bruschetta
  • 1 cup Kale
  • 1/2 cup Marinaded Artichoke Hearts
  • 5-6 Fresh Basil Leaves for topping
  • 1/4 cup Sliced Onion

Additional Garnishes:

  • Red Pepper Flakes
  • Honey
  • Pickled Onions
  • Anything else you like!

Instructions
 

For the Naan Pizza:

  • Preheat the oven to 350 degrees Fahrenheit
  • Begin with some plain naan, I like frozen but you can easily do fresh as well!
  • Top up each pizza with pesto/bruschetta, cheese, and toppings, I like to put my cheese on top of the toppings to keep the toppings in place.
  • Place in the oven, directly on the wire rack, and bake. 8-10 minutes.
  • Serve immediately! And add any garnishes you like! I always do some red pepper flakes and a quick drizzle of honey.
