The Tofu Veggie Noodles recipe is ready in less that 20 minutes. This is the perfect idea for an easy and delicious meal.

This recipe is an healthy meal idea and also a great source of protein.

You have to prepare separately the noodles, the sauce and the veggies with tofu. And then at the end to combine all together.

Use light soy sauce or dark soy sauce. The best is to use a combination of both. The difference between them is that light soy sauce is saltier but less colorful than dark soy sauce. So if you only use the light one, your meal will be salty, but not so rich in soy sauce flavor. And if you only use the dark one, the flavor will be too strong. The key is to create balance between saltiness and flavor and that is why is better to combine both. If you want a gluten free meal, use tamari instead of soy sauce.

If you can’t find sesame oil in the supermarkets or you don’t have it in the kitchen, simply replace it with any oil.

You can also replace the vegetables with a bag of frozen veggies.

Ingredients

100 g noodles

1 small carrot

1 red pepper

1/2 broccoli florets

2 garlic cloves

2 fresh green onions

200 g tofu

2 tbsp olive oil

a small hand of bamboo shoots

1 tspb sesame seeds

optional sweet chili sauce on top

 

For the sauce:

10 tbsp soy sauce

2 tbsp maple syrup

1 1/2 tbsp sesame oil

1 tbsp rice vinegar

Instructions

Step 1: cook the noodles following the package instructions

Step 2: wash the veggies and chop the garlic, cut tofu in small pieces, the pepper, carrot and the broccoli in small florets

Step 3: add the oil in the wok. When it's heated add the garlic, carrot, pepper and tofu and cook for 5 minutes. Then add the broccoli and cook for another 2-5 minutes. ( You may add a splash of water to avoid burning, depending of the type of wok you have)

Step 4: chop the spring onion. When the veggies in the wok are cooked, add the spring onion, the sesame seeds and the bamboo shots.

Step 5: make the sauce by mixing the soy sauce, maple syrup, sesame oil and rice vinegar.

Step 6: combine the veggies in the wok with the sauce and noodles

Step 7: enjoy
