If you want your day to be great, eat pasta. Are you ready for this delicious and easy Basil Cashew Pesto Pasta recipe?

You won’t believe how easy is to make this recipe. You only need a blender or a food processor and your 5 star meal is ready.

Pesto is an Italian sauce, an original dish from Genoa. Traditionally the ingredients are crushed using a mortar and pestle. You can do this too or you can choose the easier option – the food processor.

The original recipe for pesto uses pine nuts, but I replace it with cashews, as they are a lot much cheaper. I did both versions and the taste is similar. Cashews are a lot easier to find and not that pricey. I added some pine nuts on top for decoration, but this is optional. Also, the original recipe is not vegan and has Parmesan cheese. This can be easily replaced with nutritional yeast.

The key to this pasta is the strong basil taste. If you don’t like basil that much you can replace one hand of basil with one hand of fresh baby spinach leaves.

Ingredients

200 g pasta ( I used spaghetti)

2 hands fresh basil leaves

1/2 cup cashews

1/4 cup water

2 cloves garlic

2 tablespoons olive oil

2 tablespoons nutritional yeast

salt and pepper to taste

Instructions

Step 1: bring water to boil and cook the pasta according to the package instructions

Step 2: blend the rest of the ingredients ( optional- save some basil leaves for decorating the pasta)

Step 3: combine the pesto and the pasta. Optional add more nutritional yeast and pine seeds on top

Step 4: enjoy
