Breakfast Bites with Whipped Feta

Breakfast Bites with Whipped Feta

Let’s talk about breakfast – I’ve been getting VERY bored with breakfast. I know it’s the most important meal of the day but…eggs and breakfast burritos shouldn’t be had every day and I just can’t look at oatmeal again. So, enter these Breakfast Bites with Whipped Feta. The whipped feta is really the queen of the show here – smooth and creamy yogurt is blended with feta cheese to create a delicious spread. Once the spread’s made and on the bread, you can add any delightful toppings you like! I used lox, berries, peaches, and avocados but I’m sure there are dozens of other options out there.   • Easy – The whipped feta can come together surprisingly fast and with great, pre-sliced bread, you can have these breakfast bites on the table in just a few minutes.
  • Great for sharing – A batch of the whipped feta goes a long way on bread so these breakfast bites can be part of a great brunch spread and shared! The variety will also give everyone lots of options depending on their tastes and preferences.

I like to include smoked salmon on my breakfast bites.

Process

For the whipped feta – mix equal parts of your favorite feta cheese (I really like Herb Mediterranean from Trader Joe’s) with 2% Plain Yogurt and Dill Weed. Blend until smooth. I like to use my Nutribullet to blend everything together.

You don’t need many ingredients at all.

If you need a little water to get your blender going, I would recommend adding a TINY amount of water to help the consistency. About a tablespoon at a time to see how you feel about the blending. I even used some of the liquid out of the yogurt container.

Making the feta can be easier than you think!

Once blended, I like to garnish it with some chunks of additional feta cheese – but that is optional. Once your whipped feta is done, layer on to some bread with toppings and you’re good to go!

Ingredients
  

For the Whipped Feta:

  • 1 cup Greek Yogurt
  • 1 cup Feta Cheese Plus extra for topping!
  • Pinch of Salt

Toppings:

  • Your favorite bread!
  • Avocado
  • Berries
  • Peach
  • Smoked Salmon
  • 1 pinch Dried Dill (for Smoked Salmon Topping)
  • 1 tbsp Honey (for berries and peaches)

Instructions
 

Whipped Feta:

  • Into a blender: add the Whipped Feta ingredients!
  • Blend until smooth adding small tbsp/tsp of water to help blend easier but keep the creamy consistency.
  • Add extra feta and stir in. I love this but it's definitely optional. You'll have the smooth whipped feta with extra lumps in there.
  • Spread onto your favorite bread and top up with any of the toppings I mentioned or anything else you'd like! No wrong answers.
