Sweet and Spicy Chicken Kebabs

Sweet and Spicy Chicken Kebabs

Now that we’re winding down on summer BBQs, I wanted to throw out one last grilling recipe to send summer off in style. These Sweet and Spicy Chicken Kebabs are such a quick and easy recipe too – we match a spicy, store-bought marinade to save time and pair it with fresh pineapple and green pepper to create a delightful salty/spicy/sweet combo. These skewers actually make a great dinner paired with rice OR a perfect side to add to a Labor Day BBQ.

If you need more food, pair these kebabs with some brown rice.

Process

We’ll start by dicing our ingredients – bell peppers, chicken breast, and pineapple. Be sure to keep them bite size but big enough to pierce with the skewers.

You only need to cut up the bell peppers into pieces.

Then we’ll mix some marinade into the chicken – I used Grace’s Caribbean Jerk marinade which was very tasty but I will warn you that it was VERY hot (they mix in scotch bonnet peppers – yes, they are as hot as they sound). Luckily, they also have a mild version which I would guess would be also super tasty! Mix in your marinade and make sure the chicken bites are evenly coated.

Don’t forget to marinate the chicken.

Next, we’ll skewer up! I like to add the chicken to start, then bell pepper and pineapple. Repeat to fill the skewer.

We then move the skewers to the grill. I’ve used a George Foreman Grill as well for these, to great success! Grill the kebabs (about 5 minutes on each side) until the chicken is cooked through!

Prep the kebabs in whatever order you’d like.

And that’s it! Serve them up as part of your BBQ spread or over rice for a fun meal for 2.

Equipment

  • 1 George Foreman or Grill
  • 1 Skewers

Ingredients
  

  • 1 lbs Chicken Breast (cubed)
  • 1 lbs Pineapple (cubed)
  • 1 Green Bell Pepper (diced)
  • 5 tbsp Grace's Caribbean Marinade (Or other marinade of your choice!)
  • 10 Kebab Skewers (wooden or metal)
  • White Rice (Optional on the side)
  • Lemon Wedges (Optional for serving)

Instructions
 

For the Kebabs:

  • *If using wooden skewers, don't forget to soak them for 30 minutes in water! It helps prevent the sticks from splitting and/or from catching fire on a grill.
  • Cube up the chicken, bell peppers, and pineapple.
  • Add the marinade to the chicken and mix to evenly incorporate.
  • Next, add the ingredients to the skewers. You can choose any pattern you like! I did chicken, pineapple, then bell peppers. Try to poke each piece so it's as centered as possible! It helps the pineapple from splitting.
  • Time to grill! Place the skewers on a hot grill and cook for about 5 minutes per side or until the chicken is cooked through.
  • Serve up immediately with lemon wedges and rice for a complete meal!
