Chicken Tagine with Tomatoes & Honey Recipe

An authentic Moroccan chicken tagine with tomatoes and honey, chicken thighs cooked in an onion and tomato sauce subtly spiced with a mix of cinnamon, turmeric and ginger and finished with a touch of honey. Our  North African chicken stew is served with a fresh sharply flavoured lemon and coriander couscous.

Recipe Ingreds

Chicken

  • black pepper (to taste)
  • 1 tsp cinnamon
  • 0.5 tsp ground ginger
  • 0.5 tbsp honey
  • 1 tbsp olive oil
  • 1 whole onions
  • salt (to taste)
  • 4 whole tomatoes
  • 0.5 tsp turmeric
  • 4 portions chicken thighs

Couscous

  • 6 sprig fresh coriander
  • 0.5 whole lemon
  • 1 packet lemon and coriander couscous

Recipe with pictures Steps

Step 1

  • half fill a pan with water and boil
  • prick tomatoes and place in boiling water and cook for 5 mins

Step 2

  • heat the olive oil in the frying pan
  • place the chicken in the frying pan skin side down and cook till the chicken is golden brown on both sides
  • set the oven to 180C 350F or gas mark 4

Step 3

  • while the chicken is cooking
  • peel and chop the onion(s) finely

Step 4

  • drain the tomatoes and place in cold water

Step 5

  • remove the chicken from the frying pan
  • place in the oven proof dish
  • remove most of the fat from the frying pan, leaving a little fat to cook the onions

Step 6

  • Add the onions to the frying pan and cook until soft

Step 7

  • while the onions are cooking

Step 8

  • remove the skins from the tomatoes
  • chop tomatoes removing the hard central core
  • add the cinnamon, turmeric and ginger to the onions cook for 1-2 minute on a low heat
  • add the chopped tomatoes to the frying pan
  • cook for 5 mins
  • taste and season with salt and pepper if necessary

Step 9

  • add the tomato mixture to the chicken
  • cover the tagine with foil
  • place in the oven and cook for 15 minutes

Step 10

  • remove the chicken from the oven
  • remove the cover
  • return to the oven cook for a further 10 minutes

Step 11

  • remove the stew from the oven
  • add the honey to the chicken and stir
  • return to the oven for 10 minutes

Step 12

  • empty couscous into a bowl and follow the instructions on the packet
  • slice the lemons
  • wash and finely chop the fresh coriander

Step 13

  • remove the tagine from the oven
  • check the chicken is cooked by piercing the chicken and checking the juices run clear

Step 14

  • serve the chicken and couscous with a sprinkle of fresh chopped coriander and a couple of slices of lemon

Step 15

  • if cooking extra for the freezer place remaining chicken into a freezer proof container leave to cool for 1 -2 hrs then place in the freezer

How to cook our Authentic chicken tagine recipe

Remove the skins from the tomatoes, lightly fry the chicken thighs on a medium heat until the skins are golden brown. Remove the chicken from the pan and add to  the earthenware pot. Add the diced onion to the pan, cook till soft, Add the spice mix of cinnamon, ginger and turmeric to the onions and cook for a couple of minutes. Chop the tomatoes and add to the pan simmer for 5 minutes. Add the tomato mixture to the tagine pot, and cover and cook in the oven for 15 minutes. Remove the foil, cook for a further 10 minutes. Remove from the oven again and add the honey and carefully stir, return to the oven for 10 minutes and cook till the chicken is tender. Serve over couscous flavoured with lemon and coriander.

This recipe is easy to make and can be served in late autumn, winter and early spring, It makes the perfect dish for a dinner party and is an amazing comfort food dish . Eat this dish with the following side dishes

  • a crispy oven baked jacket potato.

What is a tagine

IIt is traditionally a north African dish, named after the dish it is cooked in, which is an earthen ware dish with a conical lid. The meaning of the word is Greek for frying pan. Tagines are traditionally made of sliced meats, poultry or fish and flavoured with ginger, turmeric, cinnamon and saffron. paprika and chilli. This dish often have a sweet and sour element such as dates for sweetness and spices for the sour.
