What makes sweet potato waffles so good?
- Only 2 ingredients. This recipe is so easy to whip up. All you need is a sweet potato and egg. Well, a waffle iron would help as well.
- They freeze well. I love making several waffles at a time and popping them in a freezer for a quick breakfast option. Just place frozen waffles into a toaster oven for a few minutes.
- Gluten-free. With only 2 ingredients, these waffles are free of flour and grains. The perfect bread replacement if you are on the Whole30 or Paleo diet.
Ingredients
- Sweet Potato - I like to use garnet yams for this recipe since they have a sweet flavor
- Avocado - smash with a fork to make a delicious spread for the sandwich
- Egg - the binder that holds the waffle together
- Bacon - look for sugar-free, nitrate-free, and uncured
- Spinach - wilt in a pan with a touch of olive oil
- Seasoning - you can use salt and pepper or your favorite seasoning blend
How To Make Whole30 Sweet Potato Waffles
1. Heat oven to 350° F. Place bacon on a parchment-lined baking tray. Cook for 20-25 minutes or until bacon is crispy. Transfer bacon to a plate lined with a paper towel to absorb the grease.
- Peel and grate sweet potato with a box grater.
3. Place sweet potato, egg, and seasoning into a bowl and mix.
4. Plug in your waffle iron and preheat. The device will take about 5 minutes to heat up and it will ding when the temperature is reached.
5. Place sweet potato batter into a waffle iron making sure to spread the batter to the edges.
6. Set to medium heat and cook for 5 minutes or until crispy.
7. In a small bowl smash avocado with a fork. Add a touch of salt to bring out more flavor. ¼ teaspoon should be the perfect amount.
8. In a medium-size saute pan wilt spinach in a small amount of olive oil.
9. Grab a non-stick pan and cook eggs over a low flame. Cook 2 minutes for side for over easy.
10. Time to assemble the breakfast sandwich. Cut the waffle into 4 quarters. Build the sandwich with smashed avocado, bacon, wilted spinach, and soft-cooked eggs.
Hint: After grating sweet potatoes, place them into a large kitchen towel and squeeze out the water. Removing the water will make the waffles crispy.
Substitutions
- Lettuce - instead of spinach, you could use arugula or kale
- Vegetarian - replace bacon with a plant-based one to make this vegetarian
- Turkey Bacon - if you don't eat pork, turkey bacon is a good alternative
- Spicy - add a chopped chipotle pepper to the avocado spread for a kick
- Scrambled Eggs - instead of over-easy eggs, give scrambled a try
- Sausage Patties - swap out bacon for Whole30 breakfast sausage
Storage
Flash freeze waffles and place them into a large zip-lock bag and store them in the freezer.
You can store waffles in the freezer for 3 months.
Pro Tips
- Cook bacon in the oven. Gone are the days of cooking bacon in a frying pan. Use an oven to get crispy, flat bacon.
- Yams are the best. What makes this recipe good is the sweet and salty flavors you get from the bacon and yams.
- Squeeze the grated sweet potatoes. Vegetables contain a lot of water. Removing the liquid will give you a crispy waffle.
- Preheat waffle iron. You never want to cook a waffle on a lukewarm waffle iron. Wait until your device alerts you before the sweet potato waffle frenzy begins.
- Cooking Spray. Most newer waffle irons are non-stick, but it's a good insurance policy to use a good quality cooking spray. I like this avocado spray from chosen foods.
- Slow-cooked eggs. The trick to the perfect emoji eggs is using a non-stick pan on a super low flame.
