The fresh ripe mangoes are used to enhance the taste, flavor and it also adds vibrant color to the cake. Fortunately, the place I live has mangoes all year round and we could relish it more often. This cake is a real keeper when you crave a mild sweet or a perfect dessert for a party. It also makes a great evening or after-school snack for your little ones!
Ingredients Overview
- Ripe Mango Pulp - I have scooped 2 medium-size ripe mango pulp for this recipe and you can use canned ones if fresh ones are not in season
- Cake Flour - I have used presifted cake flour here and you can also use all-purpose flour
- Cardamom Powder - Usually vanilla essence is used in most cake recipes, but i have used cardamom here to achieve a rich aroma and taste to cake. You can also use mango essence which will enhance the flavor of the cake
- Milk and Vinegar - I haven't used eggs here instead I have used milk and vinegar. This helps the cake to turn soft and moist

- Cardamom Powder - substitute with mango essence or vanilla essence
- Cake Flour - All-purpose flour, almond flour
- Vegetable Oil - Butter, Canola oil
- Milk and vinegar - Yogurt, or eggs

Mango Cake
Ingredients
- ½ cup Mango Pulp
- 1 cup All-Purpose Flour
- 1 tsp Baking Powder
- ½ tsp Baking Soda
- ¾ cup Sugar
- ½ tsp Cardamom Powder
- 1 tbsp Milk
- 1 tsp Vinegar
- ¼ cup Vegetable Oil
Instructions
To prepare Mango Cake
- In a bowl add mango pulp, oil, sugar, cardamom powder and mix well until the sugar is dissolved
- Now add the all-purpose flour, baking soda, and powder and mix well using the cut and fold method
- Add 1 tbsp of milk, vinegar and mix the mango cake mixture until smooth without any lumps
- Now pour the Mango Cake batter into an oil greased pan and spread them evenly
- Now bake the batter in the preheated oven at 360 degrees Fahrenheit for about 30 to 40 minutes. Once done, remove the cake from the oven
- Now invert the Mango Cake on a cooling rack and allow it to cool down completely
- Finally, garnish the cake with fresh-cut mangoes as shown in the video. And this step is totally optional
