  2. Easy 1-2-3 – fill-in the square corners with food and fold!
  3. Great for lunch, snack, and picnic – did I mention they are low carb, gluten-free, paleo, whole30?

And it’s FUN to make! 😀

What is nori? Is nori healthy?

Nori (海苔) is a dried edible seaweed often used in Japanese cuisine, such as sushi rolls (maki), temaki (hand rolls), or onigiri (rice ball). Seaweed products come in various forms and depending on how it’s produced, they are used in soup, salad, or even snack. Nori sheets are a type of seaweed product that’s particularly used as wraps in making sushi.

According to wikipedia, ”raw seaweed is 85% water, 6% protein, 5% carbohydrates, and has negligible fat (table). In a 100 gram reference amount, seaweed is a rich source (20% or more of the Daily Value, DV) of vitamin A, vitamin C, riboflavin, and folate.” And that makes nori a healthy and low carb food.

How to make Tuna Nori Wraps without the rice

The trick to make the wraps work without the rice is to select at least one item that has a sticky texture so that your food won’t fall out of the wraps easily.

  1. Take 2 sheets of nori wraps and gently fold them twice to make 4 squares.
  2. Cut a slit to the middle of the nori sheets.
  3. Add the food, starting from the bottom left corner and clockwise, with avocado, cucumber, canned tuna, and boiled eggs.
  4. Carefully lift the bottom left corner to fold the avocado over the cucumber and press gently to help them adhere.
  5. Keep folding – tuna and eggs – until you get one square wrap.
  6. Enjoy them right away!

Variations – What else can you add to the nori wraps?

A picture is worth a thousand words so below is my quick little doodle. Remember I said you need to pick at least one item that has a little sticky texture? Here are some possibilities –

  • Use sandwich cheese for avocado
  • Radish or, paleo kimchi or sauerkraut (drained) for cucumbers
  • Canned salmon, chicken breasts, smoked salmon, deli-style turkey, ham, chicken slices for tuna
  • Cooked rice or square shape omelet for boiled eggs
  • Add extra smokey creamy flavor with my homemade bacon aioli sauce.

How to store the extra unused nori sheets?

Keep the moisture away! Seal the bag as airtight as possible and store the sheets in a dark, dry, and cool place. I store mine in my cupboard and sometimes in the fridge drawer.

Tips for the most yummy nori wraps!

  • Enjoy them right away! Don’t wait. Nori wraps taste the best when they are fresh and crisp.
  • You can use any type of protein or vegetables you want but keep them as thin and flat as possible so it’s easier to fold.
  • Select at least one item that has a little sticky texture so your wraps are less likely to fall apart. There’s a reason sushi uses rice (i.e. rice helps ingredients to stick together) so if you go the low carb route, think of something else (e.g. avocado, sandwich cheese,…etc.)

Make a party!

These nori sushi wraps are so fun and they make great party food! Here are some of my party food selections –

Ingredients

  • 4 sheets toasted nori sheets
  • 5 oz. canned tuna in olive oil, slightly drained and mashed. Will have extra leftovers.
  • 1-2 whole mini cucumbers, or English cucumber, thinly sliced to rounds
  • 2 whole boiled eggs, sliced to rounds
  • 1 whole avocado, thinly sliced

Sauce:

  • Sriracha, or Frank's original hot sauce
  • Mayo, optional
  • Furikake , or toasted sesame seeds, optional

Instructions

  • Prepare all your ingredients before taking out the nori sheets. Use 2 sheets per wrap. Gently fold them twice to make 4 square marks. Cut a slit to the middle of the nori sheets.
  • Add the food, starting from the bottom left corner and clockwise, with avocado, cucumber, canned tuna, and boiled eggs. Place the food in an even layer and try not to overload. Add the sriracha, mayo and furikake, if using, on top of the tuna.
Step 1. lay out the foods into 4 squares
  • Carefully lift the bottom left corner to fold the avocado over the cucumber and press gently to help them adhere.
Step 2. fold the bottom left corner to the top left corner
  • Fold the top left corner to top right corner.
Step 3. fold the top right to the bottom right corner
  • Then fold again to get one square shape wrap.
Step 4. Finished nori sushi wraps in one square shape
  • Eat them right away & here’s how – with a tray under, carefully lift the wrap up with two hands and take a big bite! It might get a bit messy as some items might fall out …just like when you eat tacos but it won’t affect the taste! Have fun and enjoy! 🙂

Notes

Here are some other possibilities to add to the wraps –
  • Use sandwich cheese for avocado
  • Radish, kimchi or sauerkraut (drained) for cucumbers
  • Canned salmon, chicken breasts, smoked salmon, deli style turkey, ham, chicken slices for tuna
