About The Recipe

If I’m being honest, popovers are actually something we have never made. My whole life, my mom has owned a popover pan…but we’ve just never gotten around to it. Of course, we’ve kicked the idea around. Especially since this blog started, but we could never really settle on what to do. We wanted something simple, but we also wanted something special.

It took some debating and a lot of research about what can be mixed into a popover (and what can’t) when we landed on the idea of brown butter!

The idea was simple enough. Brown butter brings a nutty richness to…pretty much anything you add it to, but it took a lot of recipe developing and recipe adjusting to get these popovers perfect!

I think it really took about two test bakes to finally achieve that light and airy center like we wanted. Who knew something so simple could be so difficult to develop? Turns out, our mixing method on the first to bakes was completely wrong!

We were over-working the gluten and that caused us to have very dense, very hard popovers.

Now, we have perfected the mixing and not only are these the best ever popovers, but they are so simple!

Oh, and once we got these popovers right, we couldn’t get enough! They’re light, fluffy, airy, have just a little bit of crunch, and are oh so very good. We’ve used them for everything! From cutting them open and stuffing them to make sandwiches to serving them with our weekly cheese platters.

They are truly the perfect bake for any and every occasion!

Instructions

Whisk together the flour and salt.

Whisk in the milk.

Mix in the eggs one at a time, beating well after each addition. Continue beating until the batter is smooth.

Place 1 teaspoon of butter per cavity in the popover pan, then place the pan in a 425 degree oven for about 4-5 minutes, or until the butter starts to brown. Pour batter in the pan, filling each cup about 3/4 of the way full. Bake for 15 minutes before reducing the heat of the oven to 350 degrees. Bake for an additional 20 minutes, or until the popovers are golden brown. Take out of the oven and serve immediately.

What To Serve With These Popovers

Bread is the one of those things we have always had with dinner. It didn’t matter what we were having. There was always a freshly baked loaf of sourdough bread on the table just waiting to be enjoyed, but since we have been so busy with work lately, our sourdough baking has really slowed down. These popovers are the perfect replacement! Not only are they delicious, but they’re so much quicker and easier! Especially for our busy weekdays.

They go with pretty much anything…which is another reason we love them so much. So, if you’re looking for some dinner inspiration to go with these delicious popovers, here’s a quick list of a few of our favorite things to serve alongside them!

Expert Tips

  • You could use a muffin tin instead of a popover pan. If you do, use 1/4 cup batter per standard-sized muffin. These popovers will also be smaller than what you would make in a popover pan.
  • It takes 1/2 cup of batter to fill each popover cup 3/4 full.
  • Don’t open the oven door while these are baking!

  1. Can these be made with egg substitutes like Egg Beaters or Bob’s Red Mill egg substitute, or is the egg itself intrinsic to the success of the popover structure? Does it matter if you use low-fat milk? Many thanks!

    1. Hi! Thanks for the questions! Steam is what makes the popovers rise, so there shouldn’t be an issue with an egg substitute or the type of milk. The key is a thin batter.
