Who else is absolutely obsessed with super easy and super flavorful one pan meals? I’ve been trying to make dinners more streamlined and easier lately, and this Honey Garlic Chicken Stir Fry has officially landed on our dinner rotation.

How Do You Make Stir Fry Chicken So It’s Tender?

There are two tricks to making sure you have perfectly tender meat in this stir fry. The first is to take the time to marinate the meat. I know, it sounds like an extra step, but the acid in the marinade helps to tenderize the meat.

The second tip is to make sure you don’t overcook the meat. Since we’re using chicken thighs, it’s harder to overcook it, but it’s still best to keep an eye on it while it’s sauteing.

What Can I Add To Stir Fry For Flavor?

This recipe is already super flavorful from the marinade and sticky honey garlic sauce. If you want to add even more flavor, you can add some grated ginger to the pan when you add the cooked chicken back in. Then let it saute for a minute before you add the sauce. Alternatively, if you like spicy sauces, you could also add red chili flakes to the sauce.

Another fun swap is to play with the oils. You can use a teaspoon of toasted sesame oil in lieu of some of the olive oil, it adds a delicious nutty flavor. You could also use coconut oil in lieu of the olive oil for a lightly sweet flavor.

What Type Of Vegetables Should I Use In A Stir Fry?

To me, stir fry recipes are all about getting a healthy flavorful meal on the table in as little time as possible. That’s why I like to use a frozen stir fry vegetable mix. I use the Kirkland brand from Costco, but any brand will work. It makes prepping a healthy meal loaded with tons of vegetables incredibly easy.

If you want to use fresh vegetables, I’d recommend a combination of bell peppers, green beans, onion, and broccoli. You could also use asparagus if you happen to have any laying around.

Is This Recipe Gluten Free?

You’d have to swap the soy sauce with certified gluten free Tamari to make this recipe gluten free. To make it without Tamari or soy sauce, you can substitute it with coconut aminos.

Ingredients

Marinade:

  • 3 Tablespoons honey
  • 1 1/2 Tablespoons soy sauce (or certified gluten free Tamari if you eat gluten free)
  • 1 Tablespoon olive oil
  • 2 teaspoons apple cider vinegar
  • 2 medium cloves garlic (diced)

Chicken Stir Fry:

  • 4 boneless skinless chicken thighs
  • 1 Tablespoon olive oil
  • 1 Tablespoon butter
  • 3 cups frozen stir fry veggie mix
  • 1 teaspoon cornstarch
  • 1 Tablespoon water

Instructions

  1. In a small bowl, mix together the honey, soy sauce, olive oil, apple cider vinegar, and garlic.
  2. Cut the chicken thighs into 1” pieces. Add the chicken to a medium bowl, add half of the marinade, and place the rest of the marinade in a small jar in the refrigerator (reserve it for later). Toss the chicken in the marinade, and place it covered in the fridge to marinate for 10 - 30 minutes (*see notes).
  3. Heat a large nonstick skillet over medium-high heat. Once the pan is hot, add a Tablespoon of olive oil and swirl to coat the pan. Saute the chicken, stirring as needed, until it’s browned and cooked through. Remove the chicken from the pan, and leave the remaining olive oil in the pan.
  4. Turn the heat down to medium. Add the butter to the pan, and swirl to melt it and coat the pan. Carefully add the frozen vegetables (any ice on the vegetables can make it splatter against the hot oil, so do this very carefully). Saute until they’re thawed and hot, but still crisp.
  5. Add the chicken back to the pan and stir to mix.
  6. Mix the cornstarch and water together until the cornstarch is dissolved. Add it to the reserved sauce, and mix to combine. Pour the honey garlic sauce into the pan, stir to mix with the vegetables and chicken, and heat over medium heat until it simmers and thickens.
  7. Serve with rice and green onion.

Notes

It's best to marinate the chicken for 30 minutes if you have the time. The acid in the marinade helps to tenderize the meat. If you're short on time, 10 minutes of marinating time will still add some flavor.
