As summer rolls in, nostalgia hits me. It takes me back to times when summers were synonymous with freedom. Summer meant a break from school, the time spent outdoors, and a trip to my grandparents' home. But the main highlight was the anxious anticipation of the 'Popsicle Man,' whose bicycle ambled through the neighborhood delivering frozen treats to children of all ages.

Whenever I would hear the sound of the bell, usually a block away, I would hurriedly run to my room and pull few coins out of my piggy bank before the man went away. Every inch of my existence was held unto that moment when my lips hungrily met the ice. It felt almost like a glance into heaven as the ice slipped under my tongue. The popsicle didn't take long to melt, leaving behind stained lips and sticky fingers. No gourmet dish can ever beat the happiness that a popsicle gave us back then. Though we cannot travel back to those days, we can always recreate those memories.

Chocolate and peanut butter is a classic combination, and there is nothing better than pairing these two flavors together in an ice cream popsicle on a hot summer day.

Ingredients:
  • 1 ½ cups plain yogurt
  • ½ cup creamy peanut butter
  • 3 large ripe bananas
  • 2 tablespoons honey
  • 1 cup chocolate syrup
  • Crushed peanuts, optional

Instructions:
  1. In a blender, add the yogurt, peanut butter, banana and honey. Blend until smooth for about 90 seconds.
  2. Pour mixture into popsicle mold until almost full, leaving about 1/2-inch of room at the top for popsicles to expand when frozen. Insert wooden popsicle sticks and place popsicle mold in the freezer for 12 hours.
  3. Run the popsicle molds under warm water for about 5 seconds to remove popsicles easily.
  4. Line a baking sheet with parchment paper. Dip the popsicles in the chocolate syrup and allow any excess chocolate to drip off. Place the popsicle on the prepared sheet and immediately sprinkle with peanuts if desired. Repeat with all the popsicles.
  5. Return popsicles to the freezer for 20 more minutes to set.
  6. Enjoy!
