Strawberry Sweet Rolls with Strawberry Icing

Homemade Strawberry Sweet Rolls with Strawberry Icing… The perfect sweet breakfast rolls for the warm summer months ahead! Soft buttery sweet dough swirled with homemade strawberry jam, baked to golden brown perfection, then generously topped with a sweet strawberry icing. There’s nothing not to love about these sweet strawberry rolls! Every bite is fruity, perfectly sweet, and they practically melt in your mouth. These rolls make for a great make-ahead breakfast or a special holiday brunch item that’s guaranteed to impress. Make sure you enjoy these rolls warm, right out of the oven, with lots of strawberry drizzle! SO. GOOD.

About The Recipe

Honestly, we have had an abundance of strawberries growing in our garden already! It’s been a lot of fun, but as much as we love just eating strawberries with a little bit of sugar, we decided a good use of them would be to mix them into some of our favorite baked goods!

And, there is nothing more loved in this household than a freshly baked cinnamon roll. We will eat them until they run out our ears! So, since you all loved our lemon rolls so much, we decided to switch things up and make some summery strawberry rolls!

The dough itself is a standard and super easy sweet dough. Just an easy mix and let rise kinda dough. The filling we decided should be strawberry jam. It seemed to be the easiest way to get the flavor!

Oh, and the best part is that you can use either store-bought or homemade jam for this recipe. Just be sure to not overfill, trust me! We learned that the hard way… overfilled strawberry rolls equals jam. everywhere.

That was not a fun mess to clean up!

But, that meant we had extra jam to make even more delicious treats.

So, it was kind of a win-win situation!

But in all honesty, we just made another batch of these rolls because…If there ever was a breakfast recipe that you just needed to make this summer, I promise you that it’s these delicious Strawberry Sweet Rolls!

Equipment Needed

Ingredients

For The Rolls:

  • All-Purpose Flour
  • Sugar
  • Instant Yeast
  • Salt
  • Whole Milk
  • Unsalted Butter
  • Egg
  • Strawberry Jam

For The Icing:

  • Freeze Dried Strawberries
  • Powdered Sugar
  • Whole Milk

Instructions

In the bowl of a stand mixer, mix together the flour, sugar, and yeast.

In a saucepan over medium heat, heat milk and butter until the butter melts. Let the butter mixture cool to 120-130 degrees.

Pour milk mixture over dry ingredients and mix until combined.

Add egg and beat an additional 2 minutes. Switch to the dough hook and knead the dough for 8-10 minutes, or until smooth.

Transfer the dough to a greased lidded container and let rise until the dough has doubled in bulk, about one hour.

Roll out the dough to 1/8 inch thick, spread strawberry jam across, and cut into strips.

Roll each strip and place in a greased baking pan. After all twenty four rolls are rolled, cover with plastic wrap, and let rise until the rolls have doubled in size.

Bake at 350 degrees for 20-25 minutes, or until golden brown.

While the rolls cool, place the freeze dried strawberries in a food processor and process until it becomes a fine powder.

Combine strawberry powder, powdered sugar, and milk into a medium sized bowl. Mix until smooth.

Drizzle across the rolls and serve!

Strawberry Jam or Strawberry Preserves?

You can actually use either one for this recipe! In this case, we did use store-bought strawberry preserves for the filling, but you can just as easily use homemade as well. Whatever you would like! Just be sure not to overfill!

Sweet Dough Troubleshooting

The dough isn’t rising in the times stated in the recipe: The recipe card/post states the times it took our dough to rise. We are in Texas heading into summer. So, it tends to be a bit warmer here and doughs might take less time to rise. I promise there’s nothing wrong with the dough! Just let it do it’s thing, but if you really need it done, try placing it by a warm oven. The warmth from being near the oven will help it rise faster. Just don’t put the dough in the oven!

My dough didn’t rise AT ALL: This could be a few things. Is your yeast in-date? If not, then you need to get new yeast and try again. If it is, did you check the temperature of the butter/milk mixture? If the mixture over 120-130 degrees, it’ll kill your yeast! Be sure to have a thermometer on hand.

My dough isn’t smooth after kneading: Did you change to the dough hook on your mixer? This is a very important step! If you did, no worries! Just keep kneading and it’ll smoothen out.

Expert Tips

  • If milk mixture gets too hot, don’t worry! Allow it to cool to 120-130 degrees before pouring it into the dry ingredients.
  • Don’t have a big enough lidded container to allow the dough to rise? You can put the dough in a glass bowl and cover it with plastic wrap!
  • You can use a pizza cutter to cut dough into strips before rolling, or roll the dough as one large roll and then use a sharp knife/piece of plain-unflavored dental floss to cut it into individual rolls!
  • If you want the dough/rolls to proof faster, place them near something warm like the oven! Just don’t put the dough in the oven.
  • Don’t over fill the rolls with filling! It may not look like much, but It’s enough. If you add any more filling, when you roll the strips, the filling will spill out everywhere and make a huge mess!

Ingredients
 

Rolls

  • 4 cups all purpose flour

  • 4 teaspoons instant yeast
  • ½ teaspoon salt
  • 1 ¼ cups milk
  • ½ cup unsalted butter
  • 1 large egg
  • 2 cups strawberry preserves

Strawberry Glaze

Instructions
 

Rolls

  • Pour milk mixture over dry ingredients and beat with a flat beater until combined.
  • Add egg and beat an additional 2 minutes.
  • Switch to dough hook and knead until smooth and elastic, about 8-10 minutes.
  • Place dough in a covered, oiled container.
  • Allow to rise until doubled in bulk, about an hour.
  • While dough is rising, spray a baking sheet with cooking spray. Set aside.
  • Turn dough out onto lightly floured surface.
  • Roll into a rectangle that is 1/8" thick.
  • Spread dough with jam.
  • Cut into 1" wide strips.
  • Cut each strip in half.
  • Beginning with the outer edge, roll strip toward center to form a spiral.
  • Place on prepared baking sheet.
  • Cover with plastic wrap and allow to rise until doubled, about 1 1/2 hours.
  • While dough is proofing, preheat oven to 350 degrees F.
  • Bake until golden brown, about 20-25 minutes.
  • Allow to cool before adding glaze.

Glaze

  • Place strawberries in bowl of food processor.
  • Process to fine powder.

  • Add powdered sugar and milk.
  • Mix.
