Vegan Cashew Lemon Mousse

What can be more refreshing then lemons on a hot summer day? 🙂 Lately, we’ve been obsessed with lemons and lemon dessert recipes. Today is no different! We were very sceptic about this Vegan Cashew Lemon Mousse mainly because of our uncertainty regarding the texture and flavor. But we are so happy to tell you that this is a perfect summer dessert!

The recipe is super refreshing, has a strong lemon flavor, and is super creamy. To reach the perfect texture you’ll need a high speed blender or a food processor, otherwise chunks could be formed. To make the things simple, we used water for this recipe, but using non-dairy milk will be even better, just make sure to use neutral milk.

Lemon Cashew Mousse
Prep time: 2 – 8 h   Cook time: 5 min   Total: 2 – 8 h 5 min   Servings: 4




 

 

INGREDIENTS

  • 1 1/2 cup (about 200 g) raw cashews
  • zest of one lemon (organic)
  • juice of one lemon
  • 3 tablespoons maple syrup (or other liquid sweetener)
  • 1/3 cup (about 90 ml) water (or neutral non-dairy milk )
  • 1/4 teaspoon turmeric
  • 4 cups of water (to soak cashews)

TOPPING INGREDIENTS (Optional)

  • lemon zest

INSTRUCTIONS

  • Soak the cashews in 4 cups of water for at least 2 hours. We left ours overnight. When done, drain and rinse the cashews.
  • Into a food processor (or high speed blender) add drained cashews, water or non-dairy milk, lemon juice, lemon zest, and maple syrup syrup. Process until smooth and creamy. Add more water/non-dairy milk if necessary, depending on the thickness, but make sure to add a tablespoon at a time until you reach the your desired consistency. When done, add turmeric for the yellow color. We suggest you to try with half of what we put in the ingredients, and as you process add more until your reach desired color.
  • Transfer the mixture to a prepared glass or another dish. Sprinkle with some lemon zest on top (optional). 
  • Serve your Vegan Cashew Lemon Mousse right away or refrigerate it for at least 30 minutes and enjoy the chilled version of the recipe!
