Frozen Mango Lime Pie

The Happy Haandi is getting into some baking today! Ok ok, that’s already a lie. This Frozen Mango Lime Pie is very easy and has almost no baking time involved. If we’re being honest friends, baking is entirely not my forte. I think, like many people, I believe that baking is a science and…perhaps a little unforgiving. I’m also super impressed when people CAN bake – especially without instructions. Does anyone else feel this? I certainly do.

With all that said this is a great little summery dessert that just requires a little pre-made pie crust baking. We mix up some summery mango with lime, cool whip, and heavy cream, and this pie is set up right in the freezer. On hot summer nights, this pie is a great way to finish up the meal. Light, cool and sweet to taste, this one will definitely be a fan favorite!

So – let’s get started!

The Frozen Mango Lime Pie

It’s ALMOST silly to write, it’s so so quick but here we go! We start out by blending our mango into a smooth, smoothie-like texture. Add it to a large bowl with lime juice, cool whip, and heavy cream, and give it a good mix until it’s well incorporated. Optionally, I also like to add a little lime zest as well.

Next, we slide 2 unfilled pie crusts into the oven, per instructions for baking. Alternatively, graham cracker crust works great here too! And avoids baking! The pie will be a touch sweeter for it but not overwhelming.

Allow the pie crusts to cool before pouring even amounts of the mango lime mixture into each crust. You may have a LITTLE extra but I found that for the most part, they fill out pretty well.

Are you dying to take a bite, yet?

Finally, slide the pies into the freezer to set. They require a few hours (at least 6 hours) and I have found it very easy to make them the night before and allow them to set overnight. Slide them out about one hour before serving so that they can be cut easily.

Add fresh lime zest to top off this pie!

Ingredients
  

  • 2 Flour OR Graham Cracker Crusts
  • 8 oz Frozen Mango Chunks
  • 8 oz Cool Whip
  • 1 pint Heavy Cream
  • 2 cans Mango (drained)
  • 6/7 tbsp Lime Juice
  • 1/4 tsp Lime Zest (additional for garnish)

Instructions
 

For the Mango Lime Pies:

  • First, if you are using flour crust, prepare the crust in the oven per package instructions. If you're using a graham cracker crust you can skip to the next step.
  • Next, in the blender, combine the (drained) canned mango and frozen mango. Blend until smooth.
  • Add the blended mango to a large bowl and fold in lime juice, heavy cream, cool whip, and lime zest.
  • Evenly pour the mixture between the two crusts and place it in the freezer. Freeze for at least 6 hours or overnight, if possible.
  • Remove the pie about an hour before serving. Add more zest (because it's pretty) and serve up!
