Slow Cooker Roast Beef Sandwiches

These delicious Roast Beef Sandwiches are super easy to make in your Slow Cooker. A few simple ingredients are all you need to make these sandwiches.

These Roast Beef Sandwiches are so easy to make in a slow cooker. All. you need to do is dump all the ingredients into the crockpot and let it do its thing. If you are in a rush they can be ready in as little as 4 hours.

I am often asked what kind of red wine to use for this recipe. As long as it’s a dry red wine you should be good to go. A Cabernet Sauvignon, Pinot Noir, or Merlot will do just fine.

Heck, I’ve even used a nice Malbec with great success. Just use what you have on hand. Remember, if you wouldn’t drink it, don’t cook with it.

Giardiniera

Whenever I can I like to use a Sweet Brown Onion for this recipe. If you don’t have any you can easily substitute for a regular Yellow Onion.

If you don’t have any Fresh Thyme on hand you either omit it completely or substitute it for some regular or Italian Oregano.

I typically use a chuck roast when making this recipe but you can use other cuts of beef if needed. A Top Round Roast while a little pricier (at least in my area), would make a good substitute when making this slow cooker sandwich recipe.

Try to resist as much as possible the temptation to open the lid while it’s cooking as the slow cooker loses heat. By just opening the lid to stir the contents can make the internal temperature drop by 10°F to 15°F.

You will need the following ingredients to make this Roast Beef Sandwiches recipe in your Slow Cooker (see recipe card for quantities): Canola Oil, Boneless Chuck Roast, Kosher Salt, Ground Black Pepper, Sweet Onion, Garlic Clove, Fresh Thyme, Dry Red Wine, buns, Mayonnaise, Romaine Lettuce, Giardiniera, Cheese, Horseradish Sauce and Radishes.

  1. In a large skillet over medium-high heat, heat the oil.
  2. Season the Chuck Roast with salt and pepper. Fry the roast in the skillet, turning occasionally, until brown on all sides, about 3 to 4 minutes.
  3. Add the onion, garlic, fresh thyme and red wine to the slow cooker. Place the roast on top of the onion mixture.
  4. Cook covered until the roast is fork-tender on low for 6 to 8 hours or on high for 4 to 5 hours.
  5. Remove and discard the fresh thyme sprigs. Remove the roast from the slow cooker and shred or slice into the desired thickness. Return the meat to the slow cooker. Season with salt and pepper.
  6. Serve in your favorite sandwich roll with mayonnaise and optionally garnish with romaine lettuce, cheese, horseradish cream and giardiniera veggies.

Ingredients
 

  • 2 Tsp Canola Oil
  • 2 lbs Chuck Roast, boneless

  • ½ medium Sweet Onion, cut into wedges
  • 3 large Garlic Clove, chopped
  • 2 sprigs Fresh Thyme
  • ¼ Cup Dry Red Wine
  • 4 Buns, toasted
