Today is my birthday!!! Of course, it wouldn’t be complete without a birthday-themed dessert. If there’s one thing I love more than cake, it’s cookie dough. And if there’s one thing I love more than cookie dough, it’s FUNFETTI cookie dough. I mean, edible cookie dough that is loaded with rainbow sprinkles and sparkly stars? Yes, please! I may be 25 years old now, but I’m a firm believer that we are never too old for lots of sprinkles.

This vegan funfetti cookie dough is super sweet, soft, fluffy, and irresistibly delicious. It’s like cake batter in cookie dough form. The best part? Nobody will ever guess this cookie dough is made without dairy and without eggs. It’s 100% indistinguishable from the real deal. Alright, we have a birthday to celebrate and no more time to waste… so let’s do this!

Ingredients needed

  • Flour: All-purpose flour, also known as plain flour, is heat treated and incorporated into the dough. If you are gluten-free, use a gluten-free flour blend instead.
  • Vegan butter: Be sure to use vegan butter that has been slightly softened. Dairy-free buttery sticks and tub butter both work well. If you are not vegan, you can replace it with regular butter.
  • Sugar: Regular white sugar, also known as cane sugar or granulated sugar, is the main sweetener in this dessert.
  • Brown sugar: Light brown sugar adds a very subtle caramel-like flavor. When paired with the white sugar, it creates an irresistibly-delicious sweet flavor.
  • Plant-based milk: Only a tablespoon is needed, so feel free to use any type of plant-based milk. I usually use almond milk or oat milk, but it doesn’t matter in terms of flavor.
  • Vanilla extract: No cookie dough recipe is complete without vanilla extract. I prefer to use a pure vanilla extract for the best results. Imitation vanilla is another great option to get that a classic “boxed cake mix” flavor. If you use imitation vanilla, you don’t need the almond extract.
  • Almond extract: This is the secret ingredient to making desserts taste like cake batter! Surprisingly, almond extract does not taste like almonds. It has a strong, super sweet flavor that pairs well with birthday and cake batter desserts.
  • Sprinkles: Any variety of rainbow sprinkles can be used. Scroll down a bit to read my tips for finding vegan sprinkles. Depending on the occasion, you can have lots of fun with this ingredient! I love using holiday-themed sprinkles for Halloween, Christmas, or Valentine’s Day. Alternatively, use school colors to celebrate graduation day or team colors for game day.
  • Salt: A pinch of salt is required to balance the sweetness.

How to heat treat flour

The first step to creating safe-to-consume cookie dough is heat treating the flour. Why do you need to heat treat the flour? Can I just skip this step? No! You must bake the flour before creating this homemade cookie dough recipe.

We’ve all been warned against eating raw cookie dough before. Most people assume this is due to the eggs. However, it is also a warning against consuming the flour. Raw flour may contain harmful bacteria. Baking it helps to kill off any potential bacteria, making it safe for consumption. Simply spread the flour across a large baking sheet, then bake at 350 degrees F for 6-8 minutes. Remove from the oven and let it cool completely. Be sure to break up any clumps that form after baking.

While the flour is cooling, add the softened vegan butter, white sugar, and light brown sugar to a large bowl. Using a handheld electric mixer or a stand mixer, cream the butter and sugars together. Cream for 1-2 minutes or until light and fluffy.

Next, add the plant-based milk, vanilla extract, and almond extract. Cream together to combine once more.

Then, sift the heat-treated flour over the batter. (This is important to remove clumps.) Add salt. Mix together until the flour is evenly incorporated.

Toss in the rainbow sprinkles and stir together. Feel free to add any other mix-ins at this time, like white chocolate chips or regular chocolate chips.

Finally, scoop into large rounds of dough or enjoy it straight from the bowl!

Yes, this vegan funfetti cookie dough is safe to eat. Since there are no eggs and the flour is heat-treated, you do not have to worry about the potential risks that typically come along with raw cookie dough. Just make sure you don’t forget to heat treat the flour.

No, I do not recommend baking this funfetti cookie dough. The recipe does not contain a leavening agent, like baking soda or baking powder, so they will not bake properly. Also, the flour has already been heat-treat (baked) which slightly changes the texture of it.

Are sprinkles vegan?

It depends. Some sprinkles are vegan while others are not. Sprinkles are little colorful candies made with sugar, corn syrup, and artificial coloring. They do not contain dairy, so they are suitable for a dairy-free diet.

However, did you know many sprinkles contain confectioner’s glaze? Confectioner’s glaze is a food-grade shellac made from insects. Strict vegans choose not to eat regular sprinkles for this reason. If this ingredient isn’t bothersome for you, then go ahead and use any brand of rainbow sprinkles.

Recipe variations

How to make it gluten-free: This dessert can easily be made gluten-free. Replace the all-purpose flour with a gluten-free flour blend. I highly recommend the Bob’s Red Mill brand.

How to make it sugar-free: No sugar, no problem. You can substitute the white sugar and brown sugar with your favorite sugar-free alternative. I love, recommend, and regularly use the zero-calorie purecane sugar substitute. They offer both white sugar and brown sugar. There is absolutely no difference in flavor and texture. It’s basically a cheat code to indulging guilt-free!

Optional mix-ins: This funfetti cookie dough may be loaded with rainbow sprinkles, but feel free to toss in any other ingredients of your choosing. Try it with white chocolate chips, chocolate chips, shredded coconut, mini marshmallows, pretzels, or macadamia nuts.

  • 1/4 light brown sugar, packed
  • 2 tbsp plant-based milk
  • 2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 and 1/4 cups all-purpose flour or gluten-free flour, heat treated* (170 grams)
  • 1/2 tsp salt
  • 3 tbsp rainbow sprinkles

Instructions

  1. Heat treat the flour: Preheat the oven to 350 degrees F. Spread the flour across a large baking sheet. Bake for 5-7 minutes. Remove from the oven and set aside to cool completely. If the flour clumps and hardens, break it apart with a spatula. (See notes to learn why this step is important!)
  2. Cream butter and sugar: Add softened vegan butter, white sugar, and brown sugar to a large bowl. Using a handheld electric mixer or a stand mixer, cream together until light and fluffy (1-2 minutes). Add plant-based milk, vanilla extract, and almond extract. Cream together once more.
  3. Add remaining ingredients: Sift the flour over the wet batter to remove any clumps. Add salt. Mix together until the flour is evenly incorporated. Add rainbow sprinkles and stir to combine.
  4. Enjoy: Scoop the funfetti cookie dough into large rounds or eat by the spoonful. Enjoy!

  • *Why should you heat treat the flour? Raw flour is never safe for consumption. It is important to bake the flour in order to kill off any potential harmful bacteria.
