Happy Wednesday guys! Recipe of the day is Red Pepper & Olive Oat Muffins – savoury bites with Parmesan cheese, sweet peppers & olives.

Red Pepper & Olive Oat Muffins

These small bites are perfect for a picnic or as a snack on the go whenever you feel the hunger. They are super yummy and made of oats and wholewheat flour which makes them quite filling and healthy.

I used mixture of olives for a bit more flavour (and colour) and red peppers from a jar. Just make sure to rinse the pepper thoroughly as some jars can be quite sour.

What you need:

  • oats
  • wheat flour
  • eggs
  • mixed olives
  • red peppers
  • Parmesan cheese
  • yogurt
  • salt
  • baking powder

Here’s how to make these delicious Red Pepper & Olive Oat Muffins

Ingredients:

  • 200g oats
  • 100g wholewheat flour
  • 100ml rapeseed oil
  • 1tsp baking powder
  • 1tsp salt
  • 80g Parmesan cheese, grated
  • 10-12 olives, mixed, stones removed
  • 1 red pepper, thinly chopped (I used from a jar)

Preparation:

  • Preheat the oven to 190°C.
  • In a bowl, combine the wholewheat flour, oats, baking powder and salt. Add the rapeseed oil and eggs and mix well.
  • Finally, stir in the Parmesan cheese, olives and red peppers.
  • Pour the mixture into a muffin tray and bake in the oven for about 25 minutes or until ready.
  • Let them cool a bit and serve.
