Chia Pudding

Due to their nutritional value, chia seeds are trending in the food industry and are commonly found in people’s pantries. We all know that smoothies and chia seeds are almost inseparable.

So, we decided to give a different twist to chia seeds and make a pudding with our all-time favorite coconut milk. Coconut milk adds a layer of creaminess and natural sweetness to the pudding.

We have used two different types of milk, but please use your preferred milk. To make it vegan, we recommend coconut or almond milk.

Chia seeds are a great source of protein, fiber, and many more things. This delicious dessert is light but silky-creamy that will satisfy your cravings for dessert. A pinch of cardamom powder makes the flavor unique.

Chia Pudding

This chia pudding is made extra creamy with coconut milk and a pinch of cardamom brings a unique flavor to the chia pudding that has become all the rage.

Ingredients
  

  • ¼ cup chia seeds
  • 1 cup milk almond milk or whole milk
  • pinch of salt
  • ¼ cup sugar
  • 1 cup coconut milk
  • ½ tsp cardamom powder
  • 1 tbsp almonds slivered (optional)

Instructions
 

  • Soak chia seeds in the milk for at least 30 minutes or until they swell.
  • Add a pinch of salt and cook them for 1 minute on medium heat in a small saucepan.
  • Just before turning the heat off, add the sugar. Taste and adjust the sugar according to your liking. Turn the heat off.
  • Finally, add the coconut milk and cardamom powder and give it a good stir. This pudding can be eaten warm or at room temperature. Top the pudding off with the slivered almonds, if using.
